Chestnut mushrooms: 250 grams
Chickpeas: 400 grams
Greek yogurt: 6 tablespoon
Garlics: 2 cloves
Olive oil: 1 tablespoon
Curry powder: 1 tablespoon
Cumin powder: a pinch
Lemon juice: from ½ lemon
Lemon zest: 1 teaspoon
Spring onions: 1 bunch
Wholemeal breadcrumb: 85 grams
Muffin rolls: 2 pieces
Plum tomato: 2 pieces
Rocket leaves: a handful
Method Of Preparation:
Clean and wash the mushrooms. Keep it in a strainer to remove the excess water. Heat olive oil in a pan and add crushed garlic. Fry for a minute and as it turn light golden add the mushroom. Stir in a bunch of sliced spring onion and mix well. As the vegetables change color, add spices.
Mix curry powder, lemon juice and lemon zest with the vegetables. Stir well to combine the spices with the vegetables. Let it cook for a minute or two. When the mixture becomes dry, remove it in a plate and let it cool down.
If you are using canned chickpeas, put it in a bowl and crush with a potato masher. You can also make this recipe with raw chickpeas. In that case, you have to soak it overnight and then boil it with salt. You can either pressure cook or boil it in a pan. However, it is a slightly time consuming process and if you wish to avoid this, choose the canned variety. But, freshly cooked chickpeas will definitely lend more taste to this dish.
Do not mash the chickpeas completely, leave a few chunky pieces. Add the vegetable mixture. Tip in fresh wholemeal breadcrumbs and mix well. Now, grease your hands with a little bit of oil and shape them into round patties. The mixture is enough to form 4 patties.
Heat some oil in a pan and shallow fry the patties on both sides until it is crisp and golden. In about 3 to 4 minutes the patties will be fried perfectly. You can either serve these patties as a snack with a dip of tomato ketchup, Greek yogurt or mayonnaise make yummy burgers.
To make burgers with this patties, you can make a sauce with the Greek yogurt. Mix a little salt, black pepper, roasted and crushed cumin powder and spread it on each bun. Place a patty over it, cover with rocket leaves, sliced tomatoes, cucumbers and tomato ketchup. Cover it with another piece of bun and enjoy healthy mushroom and chickpea patties with burger buns.
