Healthy Tasty Chicken Fried Rice

This fried rice is a wholesome meal. This preparation, specially made rice is highly nutritious and there is a fabulous balance of carbohydrate and protein. It is also is a great source of dietary fiber, vitamin C, calcium, magnesium, phosphorous, potassium, folate and iron. This highly nutritious and low fat preparation is easily digestible and can be given to even child and a patient. In this type of preparation, vegetables give an instant energy when you eat it. Moreover, it is not all time consuming. It is easy to cook and easy to eat.

Healthy Tasty Chicken Fried Rice

Preparation Time: 30 Minutes
Cooking Time: 40 Minutes
Serves: 4

Ingredients:

1 cup Texmati rice
400 grams boneless chicken
2 potatoes
2 carrots
1 cup green peas
200 grams cabbage leaf
1 large onion, 2 tomatoes
1 cinnamon
2 green cardamom
5 cloves
pinch of saffron
1 tablespoon butter oil
1 tablespoon olive oil and salt

Preparation:

Wash rice and keep them in a container. Peel potatoes and carrots and cut them in medium size. Slice onion. Cut bone less chicken in small pieces. Soak saffron in hot water for 15-20 minutes.

Method:

Step 1

Take a big pan with deep bottom. Pour the olive oil and heat it slightly. Add cardamom, cinnamon and cloves on heated oil. Keep them on low flame for ½ minute and then add the onion slices.

Step 2

Now add the butter oil and keep stirring onions on low flame. High flame may burn spices and onion and will spoil the smell. When the onion slices turn golden add chicken, carrot and potato on it. Sprinkle salt and stir for a minute. Then add the rice. Again stir to combine everything.

Step 3

Then add tomato and green peas. Pour plenty of water in the rice. Keep them cooking on low flame keeping the lid on for 30-35 minutes and then remove the lid. With any sharp object check whether the vegetables have become soft. At last, add cabbage leaf and saffron water in the preparation.

Step 4

Saffron will provide it with a nice color. Check whether the rice is soft and there is no additional water in the preparation. Be sure to check the taste of the salt. Cook it for another 2 minutes and remove it from oven. Serve it hot. If you want you may add some butter in the time of eating.
