• Olive oil – 3 teaspoon
• Chicken – 1.8 gram
• Beer can – 440 ml

• English mustard powder – 2 teaspoon
• Thyme – 2 teaspoon
• Muscovado sugar – 1 teaspoon
• Sweet smoked paprika – 1 teaspoon
• Cayenne pepper – 1 teaspoon
• Celery salt – 1 ½ teaspoon

Step 1

In the first step, you have to set a barbecue. When its flame are dead and the coal turns into ashes, put the coal to one side. In case, you are using a small barbecue, you must remove the grills & place a sturdy tin for roasting on the barbecue floor which is just next to the barbecue. This is important for providing you space to close the lid and the chicken that is in the roasting tin. If you are using a large barbecue, you will not face any major problem in placing the chicken directly on the grills or rather a tray that you will keep on the grills. The tray won’t let it topple over. Set your barbecue accordingly as it is very important for the final cooking of the chicken recipe.

Step 2

Now you gave to make a rub. Collect all the ingredients that are to be used for rub and mix all. Sprinkle some black pepper for the taste. Now take the chicken and drizzle oil on it. Do rub the oil all over the chicken. The oil applied on the chicken will help in making it crunchy and golden brown in color that makes it even luscious to eat. Once you have applied the oil all over the chicken, dip it into the rub and massage the rub also on its skin. Massage the rub in such a way that it reaches deep inside the cavity, nooks and is applied properly on all over the chicken.

Step 3

With the help of a can opener, open the lid of the beer can. Empty half part of the can into a glass and let the rest remain into the can. The rest of the beer in the can as it is to be used to moisten the chicken. Very carefully & slowly, drop the chicken into the can. The legs should be down. Make it look like the chicken is sitting in the can in upright direction. Now you have to stand the chicken upright on the barbecue. To stand the chicken, you either place it into the roasting tin or cook directly on the grill. Cook on the side where there is no coal. Close the lid of the pan and allow the chicken to cook this way for about 1 hour and 20 minutes. The chicken should turn brown, its meat tender and then juice coming from it hold run clear into the roasting tin. If the juice doesn’t run clear, allow to cook for 10 more minutes. Check once again after this time.

Step 4

In case, you choose cooking into the oven, set the oven at 200 degree Celsius. Keep the chicken sitting upright in the baking tray and shift into the bottom part of the oven. The cooking time should be the same as 1 hour and 20 minutes. Do the same if the juice does not run clear.

Step 5

Finally, remove the chicken from the barbecue or the oven and cover it lightly with a foil. Allow to rest for 20 minutes approximately followed by serving into a platter. As this is a whole chicken, you can cut it into small pieces. However, cut as per your appetite.
