Pine nuts – 1/4 cup
Butter – 1/4 cup
Boneless chicken breast – 2 pounds (skinless)
Chopped onion – 1
Garlic Clove – 4
Soy sauce – 2 tbsp
Unsweetened coconut milk – 1 can
Paprika – 1 1/2 tsp
Ground cumin – 1/4 tsp
Curry powder – 1 tsp
Cornstarch – 2 tsp
Cold water – 1/4 cup
Method of Preparation :
Heat a large skillet over medium heat. Add the pine nuts and cook it till it gets toasted evenly. Remove it from heat and set it aside.
Melt the butter in a skillet. Cut the chicken into bite sizes and put them in the heated skillet. Cook for 10 minutes till there is no hint of pink. There should not be any juice left in the skillet.
Stir the garlic and onion into skillet and cook till it gets tender. Stir the pine nuts in the same skillet and add coconut milk, soy sauce.
Now season it with cumin, curry powder and paprika. It will give the curry a spicy and yummy taste.
Take a small bowl and put water and cornstarch into it. Mix it in the skillet as the last step. Stir continuously till the gravy gets thick.
