Hot And Tangy Yummy Egg Poach Curry

Preparation Time: 40 Minutes
Cooking Time: 30 Minutes
Serves: 6

Ingredients:

6 eggs
2 small or 1 large carrot
¾ cup green peas
2 onions
10 cloves of garlic
2 ripe and red tomatoes
5 or 6 red chili
1 tablespoon oregano
1 bunch coriander
½ cup cream
1 tablespoon butter
olive oil
black pepper
1 grapefruit
cheese and salt

Methods Of Preparation:

Step 1

Heat oil and fry 6 separate  poaches with 6 eggs. Double fry them. Keep them aside.

Step 2

Keep red tomatoes in the freezer to freeze. Then remove them from freezer and throw them in a container of boiling water. It will help to crack the skin of the tomato. Peel the skin and grind the pulp only. if you prepare tomato paste removing its skin, it becomes smoother.

Step 3

Peel onion and garlic and grind them to paste.

Step 4

Boil red chilies in water. Strain the water, remove seeds and then grind them to paste. Your red chili paste is ready.

Step 5

Grate one mozzarella cheese and keep them aside.

Step 6

Cut and squeeze one grapefruit and preserve the juice removing its seeds.

Step 7

Peel carrot and make fine slices of it. Soak green peas in very hot water for 10-15 minutes and then wash them with chilled water. This process helps green peas to retain its beautiful green color.

Step 8

Chop fresh and green coriander leaves and keep them aside for garnishing purpose. Grind black pepper.

Step 9

Heat oil in a pan. Add all the spice paste in the oil. Stir continuously to fry the paste. Now pour the tomato puree in it and add salt. Add red chili paste also. Mix well and pour some water. Let the gravy boil and add the egg poaches in the gravy. When gravy is almost dry, add carrot slices and green peas in the gravy. Remove the gravy from the oven and sprinkle some black pepper and oregano on the gravy. Add tablespoon butter in the hot gravy and keep the lid on. It will help to melt the butter and will lock the beautiful smell of pepper and oregano. After 5-6 minutes remove the lid and pour the gravy on a microwave proof bowls. Cover it with a thick layer of grated cheese. Pour the juice of grapefruit over the preparation. Now keep the bowl in the micro oven and heat it for 5-6 minutes to melt the cheese.

Step 10

Remove it from oven. Pour fresh cream over them and garnish it with freshly chopped green coriander leaves. Again sprinkle some oregano over them and serve this hot creamy and cheesy egg poach gravy with rice or bread.
