Cooking Time: 45 Minutes
Bread Slices 8
Boneless Chicken Kemah 100 gm
Onion paste 2 tbsp
Ginger paste 1 tbsp
Garlic Paste 1 tbsp
Turmeric Powder 1 tsp
Boiled Veggies 1 cup
salt to taste
black pepper powder to taste
refined oil for frying
Olive Oil 1 tbsp
Grated Mozzarella Cheese 1 cup
chopped parsley 1-2 tbsp
First you have to clean the chicken with Luke warm water. Then marinate it with 1 tsp onion paste, 1 tsp ginger paste, salt and oil for 1 hour. Then take a non stick pan and pour olive oil in the pan. Allow it to boil in medium heat.
Then pour garlic paste in it and cook it for 1 minute. Also add onion and ginger paste in it. Sauté it a little. Add tomato puree and cook it for 2-3 minutes. Then add the marinated chicken in the pan. Add salt to taste and turmeric powder in it. Cook it for 2-3 minutes. Add a little water in it and cover it up with a lid.
Cook the chicken for 15-20 minutes. Open the lid and add boiled veggies in the pan. Mix it well and cook it for another 5 minutes. Sprinkle chopped parsley leaves on the top. Turn of the flame and pour the whole thing on a plate. Allow it to cool for using in the next steps of this recipe.
Now discard the sides of the bread with a sharp knife and soak it in to water for 1-2 minutes. Then remove excess water from the bread slices by placing them in one hand and by pressing them gently with your other hand. Then roll them evenly with a rolling pin so that it looks like a thin sheet made with flour. Prepare all the bread slices in same manner.
Now pour a suitable amount of chicken stuffing on a bread slice and spread some grated cheese on it. Then cover it up with another soaked bread slice. Firmly seal the sides of the bread slice by pressing them with your fingers. In the same process prepare other bread cutlets. Make sure that you seal the bread cutlets properly. Otherwise it can spoil your oil that you are using for frying.
Now take a deep pan and pour 1 cup of refined oil in it. Allow it to boil in medium heat and pour the prepared cutlets into oil. Fry all the bread cutlets in it until they turns golden brown.
When they are done, take them out of oil and put them on paper napkins so that excess oil get removed from the cutlets. Place some iceberg lettuce leaves on a serving plate. Now cut them in to halves in diagonally and put them on a serving plate.
Here is the time to prepare the dip. For peanut dip, take some roasted peanuts and mint leaves. Grind them finely in your grinder to make a paste with that with adding little salt in it. Here your peanut dip is ready. Serve it with your Cheesy Bread Cutlet.
