Mutton dishes are all time favorite of every people. Here is the recipe for delicious Mexican style Red Mutton Curry which is very easy to cook. The ingredients used in this dish are so simple and easily available in kitchen.Moreover the preparation is not very spicy so that every member family can try this wonderful dish easily.
This quick recipe is suitable for both lunch and dinner menu. This preparation is less complicated and does not take so much time to prepare. There is a unique touch in this dish as dried red chili which gives it the bright red color and roasted sesame seed is used in it which tastes it different from any other mutton preparation. Try this dish in your kitchen and enjoy it with your family. Here the ingredients are specified for 2 people but you can increase the quantity of the ingredients keeping in mind that for how many people you are cooking for.

Mexican Style Red Mutton Curry:
Mutton 250 gm
Garlic Paste ½ teaspoon
Onion Paste ½ teaspoon
Dark Soy Sauce 1 teaspoon
Mutton Stock 1 cup
Dried Red Chili 5-6
Turmeric Powder 1/3 teaspoon
Refined Oil 3 tablespoon
chopped Garlic 3 teaspoon
Roasted Sesame Seeds 3 teaspoon
Salt to taste
Sugar as per taste
Coriander leaves 1 bunch (chopped, for garnishing).
Clean the mutton pieces properly with plenty of water. Now put it in a bowl and strain the excess water completely. Use slightly warm water while cleaning the mutton. If use cold or normal water then the mutton will take more time to boil.
Pour dark soy sauce, garlic paste, salt, onion paste and sugar as per taste in it. Marinate the mutton with all these ingredients for at least one hour.
First deseed the dried red chili and soak it in water for overnight. On the next day strain the soaked water and keep them aside. Now take a non stick pan and boil some oil in it. Pour 2 teaspoon of chopped garlic in the pan; also add soaked red chili in it. Stir them for 2 minutes and remove from flame.
Pour the roasted sesame seeds and turmeric powder in grinder; also add fried garlic and red chili with the oil in it. Then blend it in your grinder into thick paste. Take another non stick pan and pour 2 table spoon of refined oil in it.
Now pour refined oil in your pressure cooker and put it on the flame. Pour 1 tea spoon of chopped garlic in the oil and fry it until it goes golden. Then add the marinated mutton pieces in it and cook it for some time. It will take 4-5 minutes.
When the smell comes out from the mutton add 1 cup of mutton stock in it and cover it with a lid. Then pressure cooks the mutton thus it turn soft. 4-5 whistles are enough to cook it, as it will again cooked in the later step of this recipe. So better you leave the mutton half cooked.
Then take another non stick pan and pour some oil in it. Put the gas on simmer and then add chopped onion in it. Then add the garlic chili paste in it and stir well to mix. Cook it for 1-2 minutes. Then pour the half cooked mutton in it. Mix all the ingredients well. Put the gas on simmer.
Cook it for 8-10 minutes and when you see oil is getting g separated from the mutton then sprinkle chopped coriander leaves from top. Stir it for 1-2 minutes and then remove it from flame. Pour the Mexican style Red Mutton Curry in a serving bowl and serve it hot.
