Prawn And Sweet Corn Curry:
Preparation Time: 15 Minutes
Cooking Time: 30 Minutes
Butter 50 gm
Garlic Leaves a little (make fine slices of it)
Olive Oil 4 tsp
Sweet Corn 400gm
Chicken stock 2 cup
Thick Cream ¼ cup
Prawns 8-10 (Medium sized)
Chopped Coriander leaves 2 tbsp
chili flakes 1 tsp
white pepper powder 1 tsp
salt to taste
Chopped Onion 1
Chopped Garlic 1 tbsp
First peel the potato and chop it in to thin slices. Then boil sweet corn in 2 cups of water. Add a pinch of salt while boiling it and strain the water from it. Boil butter in a non stick pan in medium heat. Add chopped onion and garlic in it. Fry it for 2-3 minutes until the smell came out from it.
When it turns soft add boiled sweet corn in it. Also add chopped potatoes in it. Fry it for a while and then add chicken stock in this pan. Turn the flame to low and allow it to boil for near about 10 minutes.
Stir it for some time. Then add cream, white pepper powder and salt to taste in it. Then turn off the flame and keep it aside to cool.
Now take another non stick pan and pour butter in the pan and fry brad slices in it. When it turns golden brown turn off the flame. Pour the fried breads on a plate.
Now fry the prawns in the same butter until they turns golden. Pour the sweet corn curry in the pan. Add fried prawns and chopped coriander leaves in the pan. Cook it for 2-3 minutes.
Pour this curry in a serving bowl. Serve your Prawn and Sweet Corn Curry with fried bread slices hot.
