Today we are sharing an awesome recipe made with prawns with you. This recipe is very much easy to prepare but a little bit different in taste from any other prawn recipes. Because this recipe is done with steaming process using a small amount of oil, it is a healthy preparation for you and your family. As the name suggests here the key ingredients for this particular dish is prawn.
The prawns are first marinated with lemon juice and salt. Then it is cooked in fermented black bean sauce and other spices. You can use either dry sherry or wine in this recipe. If you are preparing this recipe for the kids you can discard them too. Chopped fresh coriander leaves are used in this recipe which helps in increasing the aroma of this recipe. Basically this dish is dominated with the aroma of Garlic, so when you are preparing this recipe be careful that the recipe must have great smell of garlic in it. So, what are you waiting for? Steamed Prawns with Minced Garlic:
Preparation Time: 30 Minutes
Cooking Time: 15 Minutes
Large or Medium sized Prawns 350 gm
Coriander Leaves a little (chopped)
Fermented Black Beans 1 tbsp (grind them to prepare a fine paste to use in this dish)
Sugar ½ tbsp
Sesame seed oil 1 tbsp
Olive oil 4-5 tbsp
Garlic 4-6 cloves (chopped)
Chopped Ginger 1 tsp
Green Chili or Red Chili 2 (sliced length wise)
Dry Sherry or wine 2 tbsp
First clean the prawns with plenty of Luke warm water and then strain excess water from it. Then slit it length wise with a sharp knife into two pieces. Keep them in a bowl. Marinate it with a pinch of salt and lemon juice for 15 minutes. Strain the excess water.
To prepare the sauce pour black beans paste, salt to taste and sesame seed oil in a bowl. Mix all these ingredients to make a thick paste.
Now take a nonstick pan and put it on flame. Pour olive oil in it and allow it to boil in low flame. Then pour chopped ginger and garlic in it. Stir it to cook for 3-4 minutes.
Then add the beans paste that you have prepared in step 2 and green chili in it; mix it well. Put the flame low. Now pour dry sherry or Wine in the pan and stir it to mix well. Cook it for few minutes in low flame.
Now pour this mixture in another bowl and allow it to cool. Now take a large sized heat proof plate or baking dish. Pour the prawns in it. Then pour the previously prepared sauce and olive oil in it. Mix them well with the help of a spatula.
Then steam the whole thing for few minutes. Keep it in high temperature for 3-4 minutes and pour chopped coriander leaves on it. Mix it with a ladle.
Now cover it with a lid and turn off the flame. Give it a standing time for 5 minutes and then pour it on a serving plate. Here your Steamed prawns with Minced garlic are ready to serve.
You can easily find Fermented Black Beans in any large departmental store or in any food item store. You can find it in cans or in tetra packs. It is nothing but basically soy beans soaked in salt. So when you are using fermented black beans in any of your recipe just be careful about the amount of salt you are using in that recipe.
