How To Make Apple Cranberry Stuffed Pork Roast

Preparation Time: 25 Minutes
Cooking Time: 1 Hour
Serves: 4


Dry stuffing mix (chicken flavored) – 1 cup
Water – 1/2 cup
Pork loin roast (boneless) – 1 (3 pounds)
Chopped apple – 1 cup
Dried cranberries – 1/3 cup
Toasted pecans – 1/3 cup (chopped)
Chopped onion – 1/4 cup
Salt to taste

Method Of Preparation:

Step 1

Preheat the oven to 165 degrees C or 325 degrees F. It depends on your oven settings. Combine the chicken flavored stuffing mix and a little water and put it in the mixing bowl. Set it aside.

Step 2

Now you need to grease the roasting pan using cooking spray. This is an important step that you need to follow.

Step 3

Now you need to trim off the fat of the pork loin. You need to trim off the connective tissue as well. This is once again a very important step in cooking this dish. You can start cutting from one side to the middle. You would need to open both sides and spread them like a book. It should be spread out like you are opening a book. Place this pork between two separate of resealable freezer bags or heavy plastic. Place it on a solid surface. Now you need to pound the pork loin and make it flat. It should be about 1/2 inch thick after pounding. Use a meat mallet to pound the pork.

Step 4

Now you need to add the cranberries, apples, onions and pecans in the stuffing mix. Season the pounded pork with pepper and salt. Spread the prepared stuffing mix on the lion. Spread it on the cut side. Roll out the pork turning it into a cylinder like shape. Secure it with a cooking twine. Place it on the prepared greased roasting pan. Now it is time to bake it!

Step 5

Finally you can bake it in your preheated oven till the pork bakes beautifully and it should be pink at the center anymore. This will take around 1 hour to bake. You can check with a meat thermometer. Place it in the center and it should read 63 degrees C or 145 degrees F. Cover this cooked meat with aluminum foil. You need to cover it with two layers. Now let it rest for about 10 minutes.

Step 6

Now it is time to serve the pork. Remove the twine and slice the pork roast in desired size. Serve it to your family and guests. Enjoy it with some red merlot wine.
