How To Make Delicious Eggplant And Spinach Meatballs At Home

Who said that meatballs can be only made with meat? We have a version for you today that can be made with eggplant and spinach. Honestly speaking, we are not fond of eggplant as a vegetable. It is not counted as our favorite but this recipe transforms the taste of eggplants and spinach and just elevates the dish. Now you do not need to worry about your kids not eating the veggies because this will surely win them over. Who knew you could make something so yummy with eggplant and spinach? Here Is The Recipe For Eggplant And Spinach Meatballs:


Preparation time: 25 minutes
Cooking time : 45 minutes
Serves : 1


Eggplant – 1 1/4 pounds
Olive oil – 2 tbsp
Salt – 1/2 tsp
Red pepper flakes – 1/4 tsp
Garlic clove – 2 (minced)
Raw walnut – 1/2 cup
Panko bread crumbs – 3/4 cup
All purpose flour – 1/4 cup
Minced shallot – 3 tbsp
Dried parsley – 1/2 tsp
Dried oregano – 1/4 tsp
Dried basil – 1/4 tsp
Ricotta cheese – 1/2
Chopped spinach – 1 whole or 1 package (dried)
Egg – 1 large (lightly beaten)
Marinara sauce

Method of Preparation:

Step 1

Preheat the oven to 400 degree F.

Step 2

Now add the cut eggplant to a baking sheet. Drizzle some olive oil and sprinkle salt, garlic and red pepper on it. Toss it to combine.

Step 3

Spread in an even layer and bake for 20 minutes. It should get tender. Remove it from oven and set it aside so that it cools.

Step 4

Decrease the temperature of oven to 350 degrees F.

Step 5

Now use food processor to grind the walnuts. It should get finely ground. It should not form into a paste. Now transfer this on a large bowl and add the breadcrumbs, shallot, flour, parsley, basil, oregano, ricotta, basil and spinach. Set it aside.

Step 6

Add the eggplant to the food processor and pulse it till the roasted eggplant gets chopped. There should be some texture. Do nut puree the mixture.

Step 7

Transfer the blended eggplant to a large bowl and mix it well. Add the crumb mixture and add salt and red pepper. Add the egg. Form a mixture and then make balls out of it. Place the prepared meatballs on a parchment paper lined on a baking sheet.

Step 8

Bake the eggplant meatballs for 30 minutes. It should get firm and brown. Serve it with marinara sauce.
