How To Make Duck Adobo At Home

It is a Filipino dish which can be made with various proteins. The recipe we have for you is Duck Adobo. The duck is a tough meat and it will take time. Here Is The Recipe For Duck Adobo:

Duck Adobo

Preparation Time: 20 Minutes
Cooking Time: 2 Hours 30 Minutes
Serves: 6


Duck legs – 6
Ground black pepper
Salt to taste
Vegetable oil – 1 tbsp
Sliced onion – 1 large
Minced garlic – 8 cloves
Chicken broth – 2 cups
Rice vinegar – 1 cup
Soy sauce – 1/2 cup
Hot pepper sauce – 2 tsp
Bay leaves – 2
Sambal chili paste – 2 tsp (optional)

Method Of Preparation:

Step 1

Season the duck legs using salt and black pepper. Seasoning is an important step you need to follow. Make sure the duck legs are cleaned and then pat dry them.

Step 2

Now take a large skillet which is deep. Heat some oil in it over medium heat. Put the duck legs in hot oil. The skin side should be down. Cook it till it is brown. It should take 3 minutes per side. Remove the duck legs now and just keep 1 tbsp duck fat in the pan and discard the rest. You will be cooking the vegetables in the duck fat.

Step 3

Now cook the onions in the duck fat over high heat. Do not burn. You want the onion to be translucent and not brown or golden. This should take 2-3 minutes. Add the garlic and cook it till it gets fragrant. This should take a minute maximum and not more than that.

Step 4

Now put the chicken broth in the skillet and then the soy sauce, hot pepper or sambal, rice vinegar and bay leaves. Put the duck legs into the skillet now and just cover the skillet loosely. Let it simmer and cook till the duck gets tender. You can check whether it is cooked or not with a fork. It should take about 2 hours to cook the duck. Duck meat is thick and it takes time to cook duck. So, be patient while cooking the duck.

Step 5

Remove the cover from the large skillet and now you need to increase the heat to high. Cook till the sauce gets thick. It should take about 5 minutes or so. Season using salt and pepper. You can serve it with plain rice – it tastes amazing. Serve it hot.
