Dark Chocolate (at least 70% cocoa): 200 grams
White Chocolate: 200 grams
Caster sugar: 300 grams
Flour: 140 grams
Unsalted butter: 250 grams
Eggs: 4 pieces
Method Of Preparation:
Take a brownie tin and line it with parchment paper. Generously brush it with melted butter, so that it is easier to unmold your brownie. Pre-heat the oven to 180 degree Celsius.
Take two bowls. Add the dark chocolate in one of the bowls along with half the quantity of butter, that is 125 grams and heat it in the microwave oven for 1 minute at High. Check at the halfway mark and mix the butter and chocolate as it starts melting. Remove it from the oven and stir well to make a smooth sauce with the melted butter and chocolate. Follow the same procedure with the white chocolate. Melt it with butter in the same way. Alternatively, if you are not using a microwave oven, use the double boiler method. Take a large sauce pan with water and let it boil. Put the chocolate bowl over the water, making sure that it does not touch the water surface. Stir continuously until the chocolate and butter melts completely.
First, break 2 eggs in the dark chocolate bowl. Mix in 150 grams of caster sugar and whisk well. Blend all the ingredients well until it attains a smooth texture. Slowly incorporate 50 grams of the flour to this mixture and blend well.
Now, proceed with the white chocolate bowl. Add 150 grams of sugar and 90 grams of flour to this mixture and whisk well until all the ingredients are incorporated with each other.
It is now time to create the marble pattern. Drop a few tablespoons of both the mixtures at the bottom of the pan in alternate lines, to create a patchwork. Once you have completely covered the bottom of the baking dish, take a tablespoon of dark chocolate mix and gently drop it over the white layer. Similarly, pour the white mixture over a dark chocolate layer. Continue this method until you have completely used up the brownie batter. If you want to make a few feathery swirls over the brownie, take a skewer and run it lightly over the surface. This will give you the desired marbled effect.
Let the brownie bake for at least 30 to 35 minutes or until the middle of the brownie is set. Once done you will notice the white chocolate patches on top has turned slightly golden.
