A healthy, filling and extremely delicious dish, sweet and spicy Apricot Chicken is the perfect Moroccan recipe for a family get together. Made with juicy chicken fillets, it is a low calorie dish that is filled with flavors. While the apricot lends a subtle sweetness to the dish, the varied mix of spices and coriander give it the perfect taste.

Ingredients:

Chicken breast fillets: 400 grams
Chicken stock cube: 1 piece
Apricot conserve: 1 tablespoon
Green French beans: 100 grams
Olive oil: 1 tablespoon
Coriander and lemon couscous: 220 grams
Kalamata olive: 14 pieces
Cumin powder: 1 teaspoon
Coriander powder: 1 teaspoon
Coriander leaves: a handful
Salt: to taste

Method Of Preparation:

Step 1

Take a large frying pan and heat olive oil. Spread the chicken fillets on it in a single layer. Sprinkle the coriander, cumin powder and salt over the chicken pieces and let it cook for a minute or two without disturbing the pieces.

Step 2

Flip over the chicken pieces and let it cook on the other side. In the meanwhile, heat some water in a large kettle. Take the couscous in a bowl and pour the boiling water over it. Heat it for a few minutes and let it bubble. Cover it and let the couscous soak in the water.

Step 3

Now, pour some boiling water over the chicken pieces. Crush the chicken stock cube and add it to the pan along with the water. Stir well until the cube completely dissolves. Add the chopped French beans, Kalamata olives and a tablespoon of the apricot conserve with chunks of fruit into the pan. Season the mixture with salt and black pepper according to taste. Give it a quick mix and let it simmer over a medium flame for 5 minutes.

Step 4

Chop coriander leaves finely and sprinkle it over the chicken pieces. Cover and let it rest.

Step 5

Open the pan with the couscous. After soaking in water, it will be fluffed. Take a fork and lightly fluff up the couscous. Dish out the couscous in serving bowls, spread a piece of chicken and gravy on top. The fragrant, delicious, sweet and spicy Apricot Chicken is now ready to be served hot.
