Here’s The Recipe For Thai Prawn Ginger And Spring Onion Stir Fry:
Preparation Time: 30 Minutes
Cooking Time: 10 Minutes
Tiger prawns: 200 grams
Thai green chilli: 1 piece
Ginger: 3cm piece
Garlic: 3 cloves
Spring onions: 8 to 10 pieces
Fish sauce: 3 tablespoon
Red pepper: 1 piece
Caster sugar: 1 tablespoon
Groundnut oil: 2 tablespoon
Water chestnuts: 85grams
Soy sauce: 1 tablespoon
Beansprouts: 100 grams
Coriander leaves and stalks: 1 bunch
Lime: 2 pieces
Salt: to taste
Black pepper: ½ teaspoon
Rice or egg noodles: for serving
Method Of Preparation:
Clean and peel the tiger prawns. Devein and keep it ready. Chop the green chilli. Finely slice 2 cloves of garlic and crush 1 clove. Slice and shred the ginger finely. Besides, slice the red pepper and water chestnuts.
In a food processor, take 1 clove of crushed garlic and chopped Thai green chilli. Finely chop the coriander stalks and add it to the spice mix along with some caster sugar, fish sauce and lime juice from half a lime. Pulse until it forms a smooth paste. Take the tiger prawns in a medium sized bowl. Add the prepared spice mix to this and toss well. Let the prawns marinate for 10 minutes. If you are in a hurry, let it marinate only until the vegetables cook.
In a large wok, heat groundnut oil. Add shredded ginger and finely chopped spring onions. Lightly fry until the ginger loses its raw smell. After 2 minutes, add the red pepper and fry for a minute or two. By this time, it will turn soft. Now add the sliced water chestnuts along with the beansprouts. Cook everything together until the sprouts start wilting. Sprinkle soy sauce over the vegetables along with salt and black pepper. Mix everything together and remove it in a dish.
In the remaining oil, add the marinated prawns. But, make sure not to add the marinade at this time. As the prawns start cooking, it will turn pink. This will take somewhere around 2 to 3 minutes on high heat. As it turns pink, add the marinade. Mix well. Make sure not to overcook the prawns or it will turn chewy. Add the cooked vegetables to the prawn and toss everything together. Remove it in a serving dish and garnish it with chopped coriander leaves. Sprinkle some lime juice on the prepared dish and it is now ready to be served with hot egg or rice noodles. You can serve it with a few lime wedges.
