Try some thing new today for your family. Today I am sharing a very healthy and delicious dish which is famous world wide. It is Thai red curry. We have used simple ingredients in it and the cooking method is so easy that any body can try it. Usually we are familiar with green thai curry, but red thai curry is also very delicious.
Coconut Milk 1 ½ cup, Potato 2 (Chopped in to dice shape), Eggplant 1 (Chopped with skin), Bay Leaves 3, Tomato 3 (Sliced), Vegetable oil 2 table spoon, Lemon juice 2 table spoon, Basil Leaves a few.
For The Red Curry Paste:
Lemon grass 3 table spoon (chopped), Green Onion 4 (Sliced), Ginger 1 (Grated), Garlic 5 cloves, Red chili 1 (sliced), Tomato Ketchup 3 table spoon, chili powder 2 table spoon, Coriander seeds 1 ½ tea spoon, Brown Sugar 1 table spoon.
First mix all the ingredients in a food processor. Now take a non stick pan and heat the oil in it. Then add the prepared red curry paste. Cook it for 1 minute and when a lovely smell came out add the bay leaves. Add 2 cups of water in it and allow it to boil for 15 minutes in medium heat. Do not cover it. Add the diced potatoes and then cover the pan with a lid. Add eggplant slices and stir. Pour ¾ th of the coconut milk and boil the whole thing for 10 minutes. When the potatoes and eggplants gets soft add tomato slices. Cook it for 5 minutes in a low flame. Then add remaining coconut milk and lemon juice in it. Garnish with basil leaves and green onion. Serve Thai Red Curry hot.
Note: Useful Tips To Prepare Coconut Milk:
We have used coconut milk in this dish. You can buy it from the market or can prepare freshly in your kitchen. I am sharing the method how you can prepare fresh coconut milk in your kitchen to use them in any dish. To prepare coconut milk first grates the coconut and then pours about 2 cups of warm water in it. Stir it and then strain the liquid with a sieve. Muslin cloth is the best option for straining it. Be careful that there must not any solid particle in the prepared milk.
