Brownies are a favourite amongst kids as well as adults. But have you ever tried delicious salted caramel brownies? Well, they are a treat to the senses and are absolutely amazing. The gooey mix of chocolate with a caramelized center is simply a delight.

Servings: 5 to 6
Plain Flour: 100 grams
Dark chocolate (with around 65% to 70% cocoa): 200 grams
Unsalted Butter: 200 grams
Eggs: 4 pieces
Caster sugar: 200 grams
Granulated sugar: 150 grams
Cocoa powder: 3 tablespoons
Vanilla extract: 1 teaspoon
Double cream: 125 ml
Softened salted butter: 10 grams
Sea salt: One pinch
Method Of Preparation:
To make Salted Caramel Brownies, you have to first make its filling. Keep a saucepan over medium heat and add 150 grams of granulated sugar. Allow it to caramelize. Stir continuously to ensure even cooking and cook only until it is dark brown. Do not let it smoke.
Switch off the stove and remove the pan. Add half the quantity of double cream and mix well. Stir in a pinch of sea salt at this stage along with 10 grams of butter and vanilla extract. The caramelized sugar will be extremely hot and it will start boiling and bubbling. Be careful and do not let it splutter on to your hands. Mix slowly and when the mixture has cooled down slightly, add the rest of the cream. Stir well to create a smooth mixture. If you find it to be lumpy, put the pan back on the stove and let it heat on a very low flame. Stir until you achieve a smooth and silky consistency.
Now it’s time to make the brownies. Take a big bowl and sift all the dry ingredients including the cocoa powder, flour and salt. In the meanwhile, preheat the oven to 180 degree Celsius. Grease a baking dish generously with butter and place a parchment paper on it. Brush some butter on the paper so that it is easier to remove the brownie.
Mix the dark chocolate with butter and let it melt on low heat. Stir continuously until the butter and chocolate start mixing with each other. As it attains a glossy texture, remove from heat and let it cool. Slowly mix in the eggs one by one. Use a whisk to incorporate the eggs with the chocolate mixture. Also, start mixing the sugar into the mix. Pour in sugar and whisk until it thickens and turns pale.
It is now time to fold the dry mixture prepared earlier. Slowly, fold the flour and cocoa powder mix into this runny batter. Whisk continuously to create a lump free batter. A few specks of dry flour, however, is nothing to worry about.
Pour the batter on your baking dish. Create the first layer by pouring half the batter. Layer it with the caramel sauce prepared earlier. Use a spatula to evenly spread out the sauce. On top of it, pour the rest of the brownie batter and gently even out with a spatula. Bake the salted caramel brownies for 25 to 30 minutes, until it is fully cooked. Insert a toothpick into the brownie between 20 and 25 minutes time to check whether it comes out clean or not. If you feel it has set, stop baking. Remove from baking tray and let it cool for an hour before cutting it into small brownie squares.
