Recipe For Yummy Huli Huli Chicken With Pineapple-Coconut Rice And Roasted Beans

Hawaii is the largest island in the United States and offers a wide range of exotic dishes to choose from. The cuisine bursts with tropical flavors and takes inspiration from several cultures. Fresh pineapples, coconut, etc. are essential ingredients in most of the dishes. Huli in Hawaiian language means, ‘to turn’. Huli huli chicken is continuously turned in a grill until roasted, after marinating in a pineapple flavored mixture. It is best served with creamy pineapple – coconut rice  and along with roasted green beans.

Here Is An Easy To Prepare Recipe For Delicious Huli Huli Grilled Chicken Along With Creamy Pineapple – Coconut Rice And Roasted Green Beans:

1. Recipe For Huli Huli Grilled Chicken:

Preparation Time: 15 Minutes
Resting Time: 2 Hours
Cooking Time: 45 Minutes
Serves: 2

Ingredients:

Chicken breasts – two pounds
Unsweetened pineapple juice – half cup
Garlic, minced – two cloves
Ginger, grated – two teaspoons
Mustard paste – half teaspoon
Soy sauce – quarter cup
Brown sugar – quarter cup
Ketchup – quarter cup
Chicken broth – quarter cup
Unsalted butter – two tablespoons

For Garnishing:

Scallions, thinly sliced two

Methods:

Step 1

In a glass bowl, mix together unsweetened pineapple juice, chicken broth, soy sauce, ketchup, mustard paste, minced garlic ,grated ginger and brown sugar. Stir well until the brown sugar is fully dissolved. Transfer this mixture to a zip lock pouch. Add the chicken breasts and seal the pouch. Massage the chicken pieces with marinade and refrigerate for at least two hours. The taste improves if refrigerated overnight.

Step 2

Preheat the oven to 425 degrees Fahrenheit. Take the chicken pieces out of the marinade and reserve the marinade. Bake the chicken for about 30 minutes until cooked well, flipping every 10 minutes.

Step 3

Add the leftover marinade to a small pan, stir in a tablespoon of butter and cook over medium heat until it thickens to a sauce consistency. Check and adjust the seasoning and keep aside.

Step 4

Once the chicken is cooked, allow it to rest for about 20 minutes. Arrange in a serving plate, spoon the prepared huli huli sauce over the grilled chicken breasts and garnish with sliced scallions. Serve along with pineapple coconut rice and roasted beans.

2. Recipe For Pineapple – Coconut Rice:

Preparation Time: 10 Minutes
Cooking Time: 40 Minutes
Serves: 4

Ingredients:

Long grained rice – two cups
Canned pineapple chunks in pineapple juice – two cans
Full cream coconut milk – one can
Garlic, minced – two cloves
Shallots, minced – three tablespoons
Ginger, grated – one teaspoon
Butter – one tablespoon
Vegetable oil- one tablespoon
Thai yellow curry paste – one teaspoon
Pepper, freshly ground – one teaspoon
Salt, to taste

For Garnishing:

Lemon juice – two tablespoons
Roasted cashew nuts, whole – half cup
Fresh cilantro, chopped – three tablespoons
Coconut flakes – one tablespoon

Methods:

Step 1

Wash the long grained rice with warm water until the water runs clear. Transfer this to a colander and keep aside.

Step 2

Strain the canned pineapple and separate the chunks and the pineapple juice. Measure the juice and add enough coconut milk to the juice so that the volume becomes four cups. Keep aside.

Step 3

Keep a cooking pot over medium heat and add the cooking oil and butter. Saute the minced garlic, ginger and shallots for about a minute. Remove from heat and add the pineapple juice- coconut milk mixture. Bring it to boil over low heat.

Step 4

Stir in the washed rice, pineapple chunks, Thai yellow curry paste and pepper. Add salt for seasoning and cook, covered over low heat for about 15 minutes, until the liquid is fully absorbed. Remove from heat and allow it to stand for about 20 minutes. Fluff it up with a fork and garnish with lemon juice, roasted cashew, coconut flakes and fresh cilantro.

3. Recipe For Roasted Green Beans:

Preparation Time: 5 Minutes
Cooking Time: 15 Minutes
Serves: 4

Ingredients:

Green beans – two pounds
Olive oil – two tablespoon
Butter – one tablespoon
Pepper – one teaspoon
Salt to taste

Methods:

Step 1

Wash the green beans, trim and pat them dry.

Step 2

In a glass bowl, mix together the green beans, olive oil, pepper and salt. Allow it to marinate for about ten minutes.

Step 3

Preheat oven to 350 degrees Fahrenheit and arrange green beans in a roasting pan in a single layer and roast for about 15 minutes, stirring every 5 minutes, until slightly charred. Take it out of the oven, stir in the butter and serve hot.

Plating Tip:

In a clean serving plate, prepare a bottom layer of Pineapple – Coconut rice and level the surface uniformly. Arrange the grilled chicken over the rice layer, to one side. Stack the roasted green beans carefully on top of the grilled chicken on one side and spoon the Huli huli sauce carefully all around the dish.
