Recipe Ingredients:

Chopped and peeled onion – Quantity: 1
Minced garlic cloves – Quantity:2
Butter or bacon grease – Quantity:1 tablespoon
Irish Harp Beer – Quantity: 2 -12 ounce
Chicken broth – Quantity: 32 ounce
Shredded Irish cheese – Quantity: 14 ounce
Cheese (low fat) cubes – Quantity: 14 ounce
Cornstarch or arrow root powder – Quantity: 2 tablespoon
Mustard – Quantity: 1 and ½ tablespoon
Bacon and chive (crushed) – for garnishing

Methods Of Preparation:

Step 1:

Medium heat a large sauce pot – and then butter, onion and garlic are added.

Step 2:

Then add a cup of chicken broth. The onion and chicken broth is mixed to form a smooth puree. The puree is added to the pot with the remaining broth and beer to boil the content.

Step 3:

Shredded cheese, cream cheese and mustard are added to the broth. Make sure that the cheese is melted and cream cheese cubes are broken. Make sure the soup is softened, smoothen and condensed for about 10 minutes and then taste it.

Step 4:

Add salt and pepper as per the requirements and taste. It may be garnished with bacon and chive to be served hot.

Note:

Make sure to take a large pot so that the content doesn’t spill over upon boiling.
