Lemon Cheesecake Mousse Recipe

Lemon zest can also be given on top of the dish to make it a bit decorative.

For The Crust

6 full sheets of crushed graham crackers
2 tbsp of granulated sugar
3 tbsp of melted salted butter

For The Mousse

3 tbsp fresh lemon juice
1 1/2 tbsp water
2 tbsp unflavoured gelatin powder
1 1/2 cup heavy cream
1 cup divided powdered sugar
Yellow food colouring which is optional
12 oz softened cream cheese
10 oz jar lemon card
Sweetened whipped cream
lemon wedges
blueberries and mint which are optional for the purpose of garnish

Steps To Follow:

Step 1:

Take a mixing bowl and mix together the crushed graham bell and granulated sugar. Pour the butter and stir again till the mixture becomes soft and moisture. Then divide the layers of the mixture and put aside 8-10 dessert cups and press the layer to make it even.

Step 2:

In the next step, pour the water and lemon juice in a bowl. Then sprinkle the gelatin and then keep it for 5 minutes. Mix the heavy cream until it becomes a foam. If one wants, they can add 1/3 cup powdered sugar and tint of yellow food colouring. This should be whipped until the lump becomes soft.

Step 3:

In a large bowl, take the whipped cream cheese and stir till it becomes smooth and fluffy. The gelatin mixture should be heated for around 10 seconds, then it should be cooled for 3 minutes.

Step 4:

While mixing the cream cheese, the gelatin should be poured into the mixture and then fold 1/3 of the whipped cream into cream cheese and the remaining whipped cream should be taken and folded till it combines together.

Step 5:

This mixture should be refrigerated for upto 2 hours. Then garnish as desired and serve cold.
