Lemon Parmesan Chicken And Rice Bowl

Cooking Time: 30 minutes

Recipe Ingredients:

Rice – 1 cup
Hot water – 2 cups
Skinless chicken breast, cut up into 1 inch pieces – 2 pounds
Vegetable oil – 5 tablespoons
Frozen broccoli – 1 package (8 ounces)
Parmesan cheese, grated – ½ cup
Onion, diced – 1
Onion powder – 1½ teaspoons
Garlic powder – 1½ teaspoons
Lemon zest – from 1 lemon
Lemon juice – from 1 lemon
Black pepper – to taste
Salt – to taste

Recipe Preparation

Step 1

Preheat your oven to a temperature of 400 degrees Fahrenheit or 200 degrees Celsius.

Step 2

Heat up an medium sized pot on medium high heat and add 2 tablespoons oil to it. Once the oil is moderately hot, add the rice and stir well to coat the rice with the oil evenly. Add hot water to the same pan to cover the rice completely and then bring to a boil while keeping the pot covered.

Step 3

Bake the rice in the preheated oven for about 12-15 minutes till all the water is absorbed by the rice and the rice becomes tender.

Step 4

Add broccoli along with salted water to a large sized pot and bring to a rolling boil. Reduce the heat and simmer till the broccoli is well cooked and tender. This should take about 5-6 minutes. Drain the broccoli and season with pepper and salt. Keep aside.

Step 5

Heat the rest of the oil on medium heat in a large skillet and add the chicken pieces to it. Add the onion powder and garlic powder and stir well. Saute the chicken till it becomes uniformly brown on all sides. This should take about 5-7 minutes.

Step 6

Add the onions in the same pan and continue to cook till they become soft and translucent.

Step 7

Now add the rice to the same skillet and continue cooking till it becomes a little browned from the bottom, around 3 minutes.

Step 8

Add in the prepared broccoli to the rice mixture and sprinkle lemon juice and lemon zest over the prepared dish. Sprinkle parmesan cheese on top and serve hot.
