1 small piece ginger
2 cloves of garlic
2 green cardamom
1 cup milk
½ cup cream
6tablespoons olive oil
1 tablespoon butter oil
mint leaves and 2 cups rice (not boiled)
Methods Of Preparation:
Boil eggs and shell them. Slit the body of eggs with the help of a sharp knife and rub some salt over them. Leave them aside.
Grind onion, ginger and garlic to paste. Grind green cardamom to fine powder.
Chop fresh coriander leaves and 2 green chilies. Remove seeds. Leave them in the refrigerator. It helps to retain beautiful green color of coriander. Chop mint leaves for rice.
Grate cheese and leave them aside.
Before cooking the egg, you have to prepare the rice. Wash rice properly and soak them in water for half an hour. Then boil water and add rice in the boiling water. When the rice turns soft, then strain the water completely. Now remove the lid and pour 2-3 tablespoons olive oil on the rice. Add lemon zest and mint leaves on the rice. Sprinkle some salt. Now put the lid on the container and shake the container again and again for proper mixing. Keep the lid on till serving so that the smell of the lemon jest and mint get mixed with the rice and makes it more appealing.
Heat a little amount of olive oil on a pan. Add eggs. Stir them continuously to fry all sides of the egg. Fry them till light brown. Remove them from pan. Now again add the remaining olive oil and 1 tablespoon butter oil in the pan. Add ginger- garlic- onion paste in the oil. Stir continuously to fry them. When they are well- fried add eggs and pour the cup of milk on the eggs. Sprinkle cardamom powder on the gravy. Cook them for five minutes. Now remove them from oven and pour the whole thing on a microwave proof oven. Sprinkle grated cheese over them. Pre heat the oven and keep the bowl in convection mode for 5-6 minutes to melt the cheese. Now remove them from micro oven and pour the fresh cream over them. Sprinkle black pepper powder, red chili flakes and oregano over the preparation. Garnish it with chopped coriander and green chili.
Serve hot cheesy egg gravy with hot mint rice with lemon zest.
