Ingredients For Lobster Rolls With Avocado Spread Recipe:

Fennel seeds – ½ teaspoon
Thinly sliced scallions – 2
Lobsters -2 of 1 ¾ pound each
Hass avocado – 1 ripe
Fresh lemon juice – 3 teaspoon
Rustic Italian grilled or toasted bread – 2 slices
Coarse salt
Freshly ground pepper
Watercress – 2 cups
Finely grated lemon zest for garnishing
Extra virgin olive oil – 2 tablespoon

Instructions To Prepare The Recipe:

Step 1

Add water in a large pot and bring it to boil. When it starts boiling, adjust the setting on medium-low. Now dip the lobster into the boiling water. Starting with its head. Allow it to be there in the water for the next 11 minutes. Do not let it boil. Now transfer the lobsters into the icy water bath prepared from before. Keep dipped for the next 10 minutes.

Step 2

Take the lobsters out and crack its claws first then knuckles, and tail. Remove the meat portion form the lobster followed by chopping the meat into small chunks.

Step 3

Place a skillet into medium-high heat. Put fennel seeds into it for the next 1 minutes. Grind the seeds later and simply transfer into the food processor together with avocado, lemon juice, scallions, salt and pepper. Grind or mash until it becomes smooth

Step 4

Take the bread and smear the avocado mixture prepared in the step above to the bread. Top the mixture with watercress, then lobster meat and finally sprinkle some scallions. Also, drizzle a few drops of oil and lemon juice on top. Decorate with the lemon zest and serve to yourself and your family.
