Ingredients Required :
5 to 6 oz. of lobster tails (about 4)
1 1/2 tablespoons of fresh lemon juice
1 tablespoon of fresh parsley, finely chopped
1 1/2 tablespoons of olive oil
4 tablespoons of unsalted butter, divided
2 fresh garlic cloves, minced
1/4th teaspoon of salt
1 teaspoon of dijon mustard
1/8th teaspoon of ground black pepper
Preparation Procedure :
Begin the preparations by setting the oven to broiler, adjusting the placement of the rack to the center of the oven. Then take the lobster tails and rinse them carefully and thoroughly under running water. Once done, shake well to get rid of the excess water and then place the lobster tails on a plate or any other flat surface.
Get hold of a pair of kitchen scissors and start cutting midway along the length of the lobster tail. Stop at the very base of the tail. Once done, flip the lobster tail to the other side and rip apart the ribs in the center to open up the shell.
Then crack open the lobster tails carefully with your fingers and get rid of any veins. Once ready, extract the flesh partly or wholly from the shells. Compress the empty shells lightly with your fingers and place the lobster flesh over the shells. Once ready, transfer the Lobster shells to a generously greased roasting pan.
Then take a small bowl and put the dijon mustard, garlic, black pepper, chopped parsley leaves, salt, lemon juice and olive oil in the bowl. Whisk everything up until well combined. Once ready, drizzle it over the flesh of the lobster tails. Once done, place the butter cubes on top of the lobster tails.
Pop the roasting pan in the broiler and place it in the middle of the oven, so that the lobster doesn’t get charred by coming too close to the broiler. Let the lobster tails broil for about 6 to 7 minutes or until the lobster flesh turns opaque and registers 145 degree Fahrenheit on a candy or instant thermometer.
Now finally to make the lemon and garlic butter, collect the drippings from the roasting pan and mix it with the remaining 2 tablespoons of butter in a saucepan. Allow the butter to melt completely and mix with the drippings. Drizzle the garlic and lemon butter over the lobster tails or serve it as a dip.
