1 inch square, cut into small cubes Pork, beef, lamb and chicken pieces – 2 to 3

Red wine vinegar – ¾ cup
Extra virgin olive oil – 1 cup
Bay leaf – 1
Peeled, smashed and roughly chopped garlic cloves – 4
For lemon zest – one lemon
Thyme leaves – 1 teaspoon
Granulated sugar – 1 teaspoon
Oregano leaves – 1 teaspoon
Squeezed lemon juice – ¼ cups
Kosher salt – 1 teaspoon
Red pepper flakes – 1 teaspoon or as per the taste
Freshly cracked black pepper – 1 teaspoon
Rolled, chopped into chiffonade basil leaves – 1 teaspoon
Method Of Preparation:
You have to start the recipe with the preparation of marinade. For preparing the marinade, you need all the ingredients that are mentioned above and put them into a large bowl. Whisk these ingredients finely. Keep aside for some time.
Now that the marinade is prepared in the above step, you have to take the meat and put into the marinade. Cover its surface with the marinade properly and tightly. Put the chunks of meat into a plastic bag and seal well. No place them into the refrigerator and store there for about 24 hours to 36 hours. Remember, that the longer your preserve the marinade into the refrigerator, the better it will contribute to the taste later. If you ae using the chicken then 10 to 12 hours is perfectly fine for marinading.
As you have already done the major steps above, you are required to make the taste even richer. For that, you need to prepare a fire into the grill. If case of the grill, you must leave about 1/3 part of it free from the coals or set the gas grill to very high.
Now it is time to take out the meat form the marinade and thread it onto the metal skewer or a wooden skewers whichever you are using. However, do soak it into water for more than 30 minute before using. The chunks of meat can be kept closer to each other. This will make it easier in the later steps. Now sprinkle some salt and pepper to each piece. Use salt as per your taste.
Set the fire quite high. This will make it easier to cook further. When you have ignited the fire high, keep the skewer of meat directly above over the flames. Let these pieces of meat cook without disturbing for some time. Check that these have turned chunky grilled form each side. This all might take about some 3 to 4 minutes. You can turn the skewers to the other side once cooked from one side. For this, you can use the kitchen tongs. Wait for this side to cook properly. Keep on turning after this side is also done. However, do not cook extra. It should turn crisp from the edges and cooked properly. This all might complete ion about 7 to 8 minutes. If they begin to burn, you can remove from grill and place aside. Cover the grill at the end so that it becomes smoke roast till the time it is finished.
