Mediterranean Chicken Served With Roasted Vegetables

Ingredients:

Thinly sliced baby new potatoes – 250 gram
Red onion, cut into wedges – 1
Diagonally sliced courgettes – 1 large
Seeded and cut into chunks yellow pepper – 1
Halved plum tomatoes – 6 firm
Pitted black olives – 12
Olive oil – 3 teaspoon
Green pesto – 1 rounded pesto
150 gram of each skinless and boneless chicken – 2

Instruction On How To Prepare The Recipe

Step 1

Set the oven at 200 degree Celsius. Take shallow roasting tin and add potatoes, pepper, onion, tomatoes and courgettes in the tin. Scatter olive on top. Season all these ingredients with coarsely ground black pepper and salt.

Step 2

Take the chicken pieces and slash its flesh about 3-4 times with the help of a sharp knife. Spread the chicken pieces on top of the vegetables in the roasting tin.

Step 3

In a large bowl, put olives and pesto together. Mix these two thoroughly until they are blended properly. After, add the paste on top of the chicken.

Step 4

This completes a major portion of the recipe. What you have to do next is to come back to the roasting tin and cover it with the help of a foil. Cook these ingredients for some 30 minutes covered.

Step 5

Now remove the roasting tin from the heat and take away its foil covering the ingredients. Shift into the oven and cook for another 10 minutes until you find the vegetables getting juicy and looking so tempting to eat and you can’t wait more. The chicken should be cooked properly. You may check it by piercing it with a skewer. If the juice comes clear from the pieces, then it signifies that it is cooked well.
