Melt-In-Your-Mouth Almond Crusted Halibut Recipe

Here Is The Recipe For Almond Crusted Halibut:


Preparation Time: 20 Minutes
Cooking Time: 25 Minutes
Serves: 6


White wine – 1/3 cup
Cider vinegar – 2 tbsp
Minced shallots – 2 tbsp
Fresh thyme – 1 sprig
Bay leaf – 1
Heavy cream – 1/3 cup
Unsalted butter – 10 tbsp
Lemon juice – 2 tsp
Salt and pepper
Halibut fillet – 6
Vegetable oil – 2 tbsp
Unsalted butter – 1 tbsp
Bread crumbs – 1/4 cup
Blanched almonds – 2/3 cup
Unsalted butter – 1 tbsp
Egg – 1 (beaten lightly)

Method Of Preparation:

Step 1

Firstly, take a saucepan and keep it on medium heat. Now combine the dry white wine, shallots, vinegar, bay leaf and thyme. Boil till the liquid gets evaporated. Stir the cream in and boil till the liquid gets reduced by half. Now decrease the temperature to low. Whisk the butter in, put 1 piece of butter at a time. You need the butter to melt completely and then add another cube of butter. Do not let the sauce simmer. If it starts simmering, it will separate and taste and look really bad. Keep an eye on the sauce.

Step 2

Now strain this sauce using a sieve in a bowl. Stir the lemon juice, salt, pepper and chives. Keep the bowl in a container of hot boiling water to keep it warm. You need this sauce to be warm because you need to serve this with the halibut fish.

Step 3

Preheat the oven. Keep it on broiler setting. Pat the halibut fish fillets dry and season it with salt and pepper. Now is the good part. We need to saute the halibut!

Step 4

Now heat oil in a skillet and add 1 tbsp of butter in it. Heat on medium heat. Saute the halibut for 2 minutes on each side. They should be brown on each side. Make sure it is light brown and cooked through. Transfer the fish to a baking sheet and let it cool for 3 minutes.

Step 5

Take a small bowl, stir the almonds, bread crumb and butter. Use egg to brush the fish fillets. Spread the almond mixture on top of the halibut fish. Spread it evenly so that you get an amazing crust on top.

Step 6

Now broil the halibut fillets for 2 minutes or till they get brown. You need to keep a watch. Place the fillets on the serving plates and serve with the sauce that we made earlier in Step 1. It is called buerre blanc. You can spoon it around the fish as well like a Masterchef dish. It will look and taste amazing. Your dish is ready to serve!
