We are a big fan of seafood! When it comes to seafood, we just love crab. Yes! Crab may look tough from outside but inside it has such tender and sweet yummy meat. How about making a crab dish tonight? It is called Crab Croquettes. It is a popular dish in Spain. You can make a saffron mayonnaise with it by mixing a bit of saffron in a vegan mayonnaise. It is a super simple dish and it is a big hit among little kids. Take a look at the recipe!

Here Is The Recipe For Crab Croquettes:

Preparation Time: 25 Minutes
Cooking Time: 35 Minutes
Serves: 10


Butter – 90 grams
Plain flour – 90 grams
Chicken Stock – 1/2 cup
Milk – 185ml
Cream – 60ml
Spanish olive oil – 3 tsp
Chopped Leek – 1
Chopped prosciutto – 3
Fresh crab meat – 1 200 gram can
Plain flour – 50 grams
Beaten eggs – 3
Dried breadcrumbs – 75 grams
Olive oil (extra light) for deep frying
Lemon wedges  for serving

Method Of Preparation:

Step 1

Take a saucepan and melt butter in it over medium heat till it starts foaming. Add flour to it and cook. Stir it for about 4 minutes. Add the chicken stock slowly and half of the milk. You can get chicken stock ready made in stores as well. Whisk it constantly till it gets combined. Now add cream and the remaining milk. Cook and stir for about 10 minutes till the sauce gets thick. You do not want it to be too thick.

Step 2

Now take a frying pan – make sure it is non stick. Heat the olive oil in it over medium heat. Make sure it is Spanish olive oil. It is easily available in stores. Now add the chopped fresh leeks and the prosciutto. Cook it and stir it occasionally. Stir it for about 4 minutes till it turns golden brown. Now add the crab meat and cook it. Stir till 2 minutes till it gets heated through. Now transfer the cooked crab meat to a heatproof bowl. Stir this into milk mix and season it with pepper and salt. Cover it and place it in the fridge for about 4 hours so that it gets chilled.

Step 3

Now take 3 separate bowls and put flour, breadcrumbs and eggs in each one of them. Divide the crab mix into about 20 portions and shape each of the portions into a log. Make sure it is a long log. Roll each of the croquettes in the flour first and then  shake off the excess. Dip it in the egg first and then roll it in the breadcrumbs and make sure it gets evenly coated. Place it on the baking dish/tray.

Step 4

You would need a saucepan now and add olive oil to it. Make sure it is extra light olive oil. You need a large saucepan which is deep. Heat it to 190 degrees C over medium heat. Make sure the oil is hot. Fry 4 croquettes in the oil. Make sure you cook in batches because it will stick if you fry it all together. Cook for 3 minutes till it gets golden brown. Transfer the fried croquettes to a paper towel so that the oil gets absorbed in the paper towel. Repeat and make 4 more croquettes. Make sure you reheat the oil in between.

Step 5

Place the crab croquettes in a serving plate. Serve it with mayonnaise and the lemon wedges. Your dish is ready to serve!
