Today I am going to share a very delicious American cuisine with you. This is Spinach Baked Chicken With Boiled Vegetables. This is an authenticate American recipe. We all love to eat chicken. But vegetables? We hardly like to eat. We should always keep in mind that most of the essential vitamins we get from vegetables only. Chicken, fish give us protein. But we have to take in vegetables for vitamins. Some of us do not like the taste of vegetables.
Hence, I always try to share recipes which have some vegetables used in a different manner so that the taste becomes good. Here also in today’s recipe, I am going to use spinach. Spinach is enriched with fiber and lots of other vitamins. It is also very good for eyes. We will also be using almond. Almond is very good for brain. You should make this recipe to your kids. Along with the taste, they will get the essential vitamins through chicken and spinach. So friends, let’s start of today’s delicious recipe.
We Would Need To Make The Following Preparations For Today’s Recipe:

1. Spinach Baked Chicken With Bread:
Preparation Time: 20 Minutes
Cooking Time: 40 Minutes
2 pieces of boneless chicken leg
2 tsp of butter
1 tsp of chopped almond
2 tsp of spinach leave paste ( Process of making this written in method of prepration)
1/2 pound whole wheat bread
2 cup of roughly chopped onion
2 tsp of fresh cream
4-5 drops of white wine
1 tsp of thyme
salt as per taste
Method Of Preparation:
Wash the chicken legs very well. Now mix chopped thyme, salt and white wine with it. Boil some water in a bowl. When the water will start boiling, add spinach leaves in to it. Boil them for about 5 minutes on high flame. When the leaves will become soft, switch off the flame and cool down the leaves. After the spinach leaves are cooled down, make a fine paste of it using a mixer grinder. Now we will be using this spinach paste in to our recipe.
Take a mixing bowl. Add fresh cream in to it. Beat the cream well. Now add chopped almond in to it. Add spinach paste and chopped onion in to it. Mix everything very well. Now marinate the chicken legs with this marinade for minimum 20 minutes. If you want you can use some more drops of white wine in to the chicken. This will make the chicken soft.
After 20-30 minutes, wrap the chicken legs with its marinade by an aluminium foil and bake them for 30 minutes at 160 degree Centigrade.
Take another baking tray. Grease it with little oil or butter. Now put the bread pieces on it. Put the baked chicken on the bread. Now cover the baked chicken leg with another piece of bread. Wrap the baking tray with an aluminium foil and bake it at 160 degree centigrade for 10 minutes.
We are done with our spinach baked vegetables. Let’s go for boiled vegetables.
2. Boiled Vegetables:
Preparation Time: 10 Minutes
Cooking Time: 10 Minutes
1 medium size cabbage
1 medium size carrot
2-3 cherry tomato
salt as per taste
2 tsp olive oil
1/2 tsp of black pepper powder
Method Of Preparation:
Cut the carrot, cherry tomato and the cabbage roughly at an inch shape. Boil water in a bowl. Now add these cut vegetables in to the boiling water. Add 1/2 tsp salt in to it. Boil them for about 5-6 minutes on high flame. After that take them out from the water.
Heat 2 tsp of olive oil in a frying pan. Now add this semi boiled vegetables in to it. Saute them on high flame. Add little salt and little black pepper powder. Mix them well. Switch off the flame. If you want, you can use some colored bell pepper as well.
We are done with our boiled vegetable.
Take a platter. Put the baked vegetables along with the baked bread at the center of the platter. Now put the boiled vegetables at the side of the platter. Top the chicken with some butter and serve it hot.
