Mouth Watering Indonesian Fish Curry And Vietnamese Jasmine Rice Recipe At Home

Today I am going to share two continental recipes with you. They are Indonesian Fish Curry and Vietnamese Jasmine Rice. Both the dishes taste very delicious. The fish that I have used in making Indonesian Fish Curry is salmon. I chose salmon due to its amazing taste. However, It’s completely up to you which fish you want to use to make this. This recipe can be made by using sardine as well. But definitely use sea fish. The taste of sea fish adds an extra flavor to this dish. This fish curry goes best with any kind of rice item. Today I will be making Vietnamese Jasmine Rice which will go amazingly with this fish curry. In this rice item, I used jasmine rice. You can get it at any hypermarket. However, you can use any long grain rice if jasmine rice is unavailable at your place. Brown rice can also be used to make this recipe. So friends, let’s start of making these two recipes one by one.

The Recipes That I Will Be Making Today Are:

1. Indonesian Fish Curry
2. Vietnamese Jasmine Rice

Let’s start with Indonesian Fish Curry.

1. Indonesian Fish Curry:

Indonesian Fish Curry

Preparation Time: 15 Minutes
Cooking Time: 20 Minutes
Serves: 4

Ingredients:

We would need some very easily available ingredients to make this:

500 grams of fish ( Fish at your choice. I used Salmon fish due to it’s taste)
8 shallot cut in to halves ( Shallot is nothing but baby onion)
2 clove of garlic
3 inch piece of ginger
1/2 tsp turmeric powder
4 tsp peanut oil
1 cup fresh lemon grass
1 and 1/2 cup of coconut milk ( Available at any departmental store or you can soak crushed coconut in to water to get milk)
1 tsp of sugar
5 green chili ( boiled and cut in to halves)
1/4th cup of water
salt to taste

Method Of Preparation:

Let’s follow some simple steps to make this:

Step 1

Cut the fish in to medium pieces. Marinate all the pieces with salt for 5 minutes. After 5 minutes, fry all the fish pieces lightly. Keep them aside.

Step 2

Make a smooth paste of shallot, garlic and ginger using a food processor. Now take a frying pan. Add oil in to it. Heat oil on medium flame. Now add the shallot-ginger-garlic paste, lemon grass and turmeric powder in to it. Saute for about 4-5 minutes on medium flame.

Step 3

When the raw smell of ginger and garlic will go off, add coconut milk and plain water in to it. Reduce the flame. Let the coconut milk and water boil for 10 minutes. Cover the frying pan with a lid.

Step 4

After 10 minutes, add the fried fish pieces in to the frying pan. Cover the pan with a lid. Keep it like that for another 10 minutes or until the gravy becomes thick. When the gravy will become almost dry and it will start removing oil, switch off the flame. We are ready with our simple yet delicious Indonesian Fish Curry.

Now we will learn how to make Vietnamese Jasmine Rice which we will be eating with our delicious Indonesian Fish Curry.

2. Vietnamese Fried Rice:

Vietnamese Fried Rice

Preparation Time: 15 Minutes
Cooking Time: 30 Minutes
Serves: 4

Ingredients:

Let’s check what would we need to make this rice recipe.

400 grams uncooked jasmine rice ( You can get it at any departmental store. However, it can be replaced with any long grain rice or even with brown rice)
5 cups of water
1/2 cup of soy sauce
2 tsp of sugar
2 tsp sesame oil
4 tsp of peanut oil ( Can be replaced by olive oil)
2 tsp finely chopped garlic
150 grams of baby corn cut in to small pieces
1/2 cup of finely chopped carrot
200 grams of snow peas cut in to small pieces ( Snow peas are small baby peas)
2 eggs
1 cup finely chopped onion
1/2 tsp white pepper powder
salt to taste.

Method Of Preparation:

Let’s make this easy and yummy rice with help of some easy steps.

Step 1

Boil water in a big vessel. Add uncooked jasmine rice in to it. When the rice will be cooked, switch off the flame. Remove the excess water with the help of a strainer. Now cover the cooked rice and keep it aside for 5 minutes. After 5 minutes spread the cooked rice in a tray and wrap them with a kitchen towel. Keep it inside the freeze for 10 minutes.

Step 2

Take a mixing bowl. Add soy sauce, sesame oil and sugar in to it. Mix them very well.

Step 3:

Heat peanut oil in a frying pan. Add chopped garlic in to it. Fry till the raw smell of garlic goes off. After that add snow peas, baby corn and carrot in to it. Saute for 3-4 minutes on high flame. Now add 3 cups of water in to it. Stir continuously until the vegetables are getting boiled and the entire water is dried up.

Step 4

Take out the cooked jasmine rice from freeze and add it in to the frying pan where we are frying peas and baby corn. Now mix the rice with the vegetables very well.

Step 5

Beat 2 eggs properly. Make a hole in the middle of the rice in the frying pan. Add the beaten eggs in to that hole. Now mix the rice with the eggs. Add the soy sauce and oil mixture in to it. Fry the rice on high flame for 5 minutes. Stir continuously. Add white pepper powder and salt. Mix them well and switch off the flame. our Vietnamese Rice is ready. Serve it hot with Indonesian Fish Curry.
