Mouth-Watering Moroccan Lamb And Date Tagine Recipe

Moroccan Lamb And Date Tagine

Preparation Time : 30 Minutes
Cooking Time : 3 Hours 30 Minutes
Serves : 6

Ingredients :

Sweet paprika – 1 tbsp
Ground cumin – 2 tsp
Ground ginger – 1 tsp
Ground coriander – 1 tsp
Cayenne pepper – 1/4 tsp
Lamb shoulder (boneless) – 1.5 kg
Stock Chicken – 2 1/2 cup
Tomatoes – 2
Brown onion – 1 (grated)
Crushed garlic clove – 4
Honey – 1 tbsp
Cinnamon stick
Saffron threads – 1 pinch
Dried apricots – 1/2 cup
Pitted dates (sliced) – 1/2 cup
Flaked almond – 1/4 cup
Fresh coriander – 1/3 cup
Precooked couscous

Method :

Step 1

Combine the cumin, paprika, cayenne pepper, ground coriander and ginger in a ceramic bowl. Season this with pepper. Add the lamb shoulder to it. Make sure the butcher has trimmed the fat of the lamb. Toss to coat it evenly. Cover this and keep it in fridge overnight. This will marinate overnight.

Step 2

Preheat your oven to 180 degree C. Transfer the marinated lamb to an ovenproof dish. Now add the chicken stock, sliced onion, chopped tomato, diced garlic, cinnamon, honey and saffron to the dish. Cover the dish and bake it for 2 1/2 hours till the lamb gets tender.

Step 3

Now remove it from the oven and pout the dates and apricots in it. Season with some salt and bake it for 45 minutes. Bake it uncovered this time till the sauce gets thick and lamb is really tender.

Step 4

Now while this is baking, take a large pan and cook the almonds. This should take about 3 minutes to roast the almonds. Set it aside to cool it. You would need these almonds for garnishing. Also, chop some fresh coriander sprigs for garnishing.

Step 5

Now take out the lamb and serve it in a bowl. Garnish it with almonds and the fresh coriander sprigs. Serve it with precooked couscous. Your Lamb and Date Tagine is ready to eat! Serve it hot along with the couscous. Couscous is easily available in the market. You need to boil it like regular rice. Couscous is healthier than rice any day!
