Sometimes you wonder about what to serve in snacks? You always want that it must be delicious and nutritious in the same time. So here is a superb recipe for your snacks. This recipe is made with baby corn which is very healthy and it is served with a homemade dip which is free from any artificial preservatives. so try it and enjoy it with your family.
Baby Corn Beguile With Peanut Dip:
Preparation Time: 30 Minutes
Cooking Time: 30 Minutes
Baby Corn 200 gm
Ginger Garlic paste 2 table spoon
Turmeric Powder ½ teaspoon
Green Cardamom Powder 1 teaspoon
salt to taste
rice flour ¼ cup
Corn Flour ¼ cup
Refined Oil 1 ½ cup
Mustard Seeds 1 teaspoon
Green Chili 1 teaspoon (chopped)
Chopped Ginger 1/3 teaspoon
Curry Leaves a little (chopped)
Sour Curd 2 table spoon
Coriander Leaves 1 bunch
For The Preparation Of Peanut Dip:
Roasted Peanuts 50 gm
Roasted Dried Coconut 2 table spoon
Chopped Ginger 1 teaspoon
Chopped Garlic 1 teaspoon
Chopped Onion 1 table spoon
Dried Red Chili 2
Tamarind Pulp 1 table spoon
Mustard Seeds ½ tea spoon
Curry Leaves a little
salt to taste
First clean the baby corns with lots of water so that there were no impurities in it. Pour the baby corns in the bowl. Also add salt, freshly squeezed lemon juice, ginger-garlic paste, turmeric powder, dried red chili powder and green cardamom powder with the baby corn.
Marinate the baby corns with all these spices for 10 minutes. Then add rice flour and cornflour in this bowl. Now wash the coriander leaves and chop them finely. Now add chopped coriander leaves in the pan.Then mix well all the ingredients and coat the baby corns with this mixture.
Prepare the baby corns in a plate and keep them in refrigerator to set. Then boil refined oil in a deep non stick pan. Fry the baby corns in medium heat till the baby corns turns golden. Take another non stick pan and boil a little oil in the pan.
Then add mustard seeds and wait until it starts to splatter. Then pour chopped onion and green chili in the pan. Fry them for a while. Wait until the onions get transparent.
Add curry leaves and chopped ginger in it. Then add sour curd and fried baby corns in the pan. Cook the whole thing for 2 minutes. Stir them for a while to mix.
Now prepare the Peanut Dip. For that take a non stick pan, add a little oil in to it and allow it to boil. Then pour dried red chili, chopped onion, chopped garlic and chopped ginger in the pan. Then fry it for 2-3 minutes until it smell nice.
Then add roasted peanuts and roasted dried coconut in the pan. Also fry it until it turns golden. Then add the tamarind pulp in the pan and cook it. Turn off the flame. Take another pan and put a little oil in it.
Then add a little mustard seeds and curry leaves in it. Then pour the previously prepared peanut mixture in it. Turn of the flame and keep it aside to cool.
Now blend it to make a fine paste in blender. Then pour this paste in a small bowl to serve it as a dip. Serve your Baby Corn Beguile with this peanut dip as your afternoon snacks.
If you do not like green chili, you may use chili flakes instead of that in this recipe.
