Fried Jumbo Prawn With Red Chili Paste:

Prawn 300 gm
Red Chili Paste 2 tbsp
Chopped Onion 5 gm
Chopped Garlic 5 gm
Chopped Ginger 5 gm
Coriander Leaves 5 gm
Tomato Sauce 3 tbsp
Fish Sauce 2 tbsp
Salt and Sugar to taste
Ajinomoto as required
Water 100 ml
Olive Oil 2-3 tbsp
Coconut Milk 2-3 tbsp
First clean the prawns properly with Luke warm water and then dress it properly. Pour few drops of lemon juice and a pinch of salt in it. Mix it and leave it for 10 minutes aside.
Take a non stick pan and put in on flame. Pour olive oil in the pan and allow it to boil. Discard the water that is produced after marinating the prawns. Now fry these prawns in olive oil till they turn golden. But do not fry the prawns so much as it will make the prawns hard which can spoil your dish.
When it is done take it out from your pan. In the same oil add chopped garlic in the pan and fry it a little until a fantastic smell comes out of it. Stir it frequently so that the garlic did not burn at the bottom.
When the garlic changes its color add chopped onion and chopped ginger in the pan. Cook it for 2 minutes. Then pour 2 tbsp of red chili paste in the pan and cook it for 1-2 minutes. You will find a fantastic smell is coming out from your pan.
Then add the fried jumbo prawns in the pan. Stir it to mix with all the other ingredients. Add required amount of water in the pan. Cover this pan with a lid and leave it to cook for 6-7 minutes.
