Pan Seared Duck With Yummy Blueberry Sauce Recipe

Preparation Time: 45 Minutes
Cooking Time: 45 Minutes
Serves: 4


Salt – 2 tsp
Ground black pepper – 1 tsp
Dried thyme leaves – 1 1/2 tablespoon
Crushed dried rosemary – 1 tbsp
Olive oil – 3 tbsp
Cubed potatoes – 4
Fresh blueberries or frozen blueberries – 2 pints
Water – 1/2 cup
Apple juice – 1/2 cup
White sugar – 1/2 cup
Chopped jalapeno pepper – 1
Sliced Bacon – 3 slices
Sliced shallots – 6
Sliced Shiitake mushrooms – 1/2 cup
Sliced bok choy – 2 pounds
Boneless duck breast – 4
Vegetable oil – 2 tbsp
Butter – 1 tbsp
Balsamic vinegar – 2 tbsp

Method Of Preparation:

Step 1

Preheat the oven to 190 degrees C or 375 degrees F. Take a bowl and mix the salt, thyme, black pepper and the rosemary together. Keep it aside. You need this as the spice mix to season the duck breast and roasted potatoes. This spice mix is important so keep it aside for the time being.

Step 2

Next step is to place the potatoes in a baking dish. Make sure it is cubed potatoes. Drizzle some olive oil and 2 tbsp of the spice mix that we prepared in the first step. Sprinkle it on top of the cubed potatoes. Toss the cubed potatoes. They should be evenly coated with the mix seasoning and the oil. Spread this in a layer at the bottom of baking dish and bake it for 40 minutes in the oven. Make sure you bake it in the preheated oven.

Step 3

Since the potatoes are roasting, you need to get to the next step. Stir the water, blueberries, sugar, apple juice and jalapeno in a saucepan. You can use fresh blueberries or the frozen one too. It depends on what you get! Bring it to a boil on medium high heat. Reduce the heat to low and let it simmer till the mix reduces. It should turn into a syrup in about 10 minutes.

Step 4

Take a large skillet and cook the bacon in it. Alternatively you can use pancetta as well. Remove it once it turns crispy. Drain the bacon on a paper towel. Let the drippings be in the skillet. Cook the mushrooms and shallots in the same skillet. Cook till it gets soft and brown. Remove the mushrooms and shallow and set it aside. Increase the heat to high and add the bok choy to the skillet. Cook till the bok choy turns tender. It should take 5 minutes. Now add the shallots, bacon and mushrooms again to the same skillet and turnn the heat off. Set it aside.

Step 5

Now you would need to rinse the duck breast. Make sure it is the halves of duck breast. Once you have rinsed, pat it dry. Whatever spice mix is left that we made in step 1 should be rubbed on the duck. Make sure you cover the sides and insides everything. Take a skillet and preheat it over medium high heat. Once it is hot, put butter and oil in it. Place the marinated duck breast in the oil. Skin side should be down. You want the duck breast to be deep brown. It should take 5 minutes or so. Turn the duck and cook till the temperature says 71 degrees C of the insides of the duck.

Step 6

Now remove the cooked duck and place it on a plate. Cover it with foil and let it rest for about 4 minutes. While it is resting, place the bok choy mix skillet on the burner and let it warm on medium heat. Serving time is coming!

Step 7

Now you need slice the duck breast into strips. You need about 1/2 inch strip of the duck breast. Divide bok choy mix on plates and drizzle 1/2 tbsp of balsamic vinegar on the plates. Now arrange the duck breasts which are sliced on top of the prepared bok choy mix. Use a spoon to put some blueberry sauce on the sides. Serve it with the potatoes as sides. Your dish is ready to serve! You will have a colorful plate and the dish will be delicious to eat.
