Parfait With A Liqueur Twist Recipe

Parfait is a French frozen dessert. This is an ideal option if you are throwing a formal dinner party especially if you are preparing French cuisines. Here is a recipe of the delectable parfait with a surprise ingredient that would make it even more drool-worthy.

Boozy Parfait:

Serves: 4

Ingredients:

Free-range egg yolks- 8 nos.
Caster sugar- 100 gms
Dessert wine- 250 ml
Cayenne pepper- a pinch
Lemon juice- 1-2 tsp, freshly squeezed
Whipping cream- 200 ml, whisk continuously until soft peaks are formed
Baileys- 50 ml
Vanilla cream or caramel sauce- as required, to garnish and serve
Nuts- a handful, roasted and chopped

Raspberry- a handful
Cocoa powder- a little, for dusting

Method of Preparation:

Step 1:

Whisk together egg yolks, dessert wine and sugar in a big heatproof bowl until fluffy and pale.

Step 2:

Take water in a pan and let it heat. Once the water is simmering, take the bowl with the mixture and set it on the pan. Start whisking again for another three to four minutes or until the mixture becomes pale and gets thickened. The idea is to get the temperature of the mixture reach 78°C to 80°C.

Step 3:

Take a large bowl of ice water and set the bowl with the mixture in it. Keep whisking until cool.

Step 4:

Add in the lemon juice and cayenne pepper. Keep aside until the mixture becomes completely cold.

Step 5:

Add in one-third of the whipped cream in the mixture and whisk again. Then, carefully fold in the remaining whipped cream followed by the Baileys.

Step 6:

Pour in the mixture into a 500 gms loaf tin and level the top with a palette knife. Refrigerate it for 12 hours or until it becomes solid.

Step 7:

When it is time to serve, dip the tin in hot water to loosen the parfait. Use a blunt knife in circular motion to take the parfait out of the tin and place it on a long and big plate.

Step 8:

Slice up the parfait. Sprinkle chopped roasted nuts or raspberry on or around it. Finish off by dusting with cocoa powder. Serve with vanilla cream or caramel sauce.

Tip:

To make this dish a vegetarian one, swap egg with a mixture of chocolate bar (chopped) and milk prepared together.
