Ingredients That Are Needed To Prepare This Recipe

For The Skewers

•    Tenderloin or shoulder sliced into thin rectangle shape – 1 ½ pounds
•    Minced garlic cloves – 2
•    Minced shallots – 1
•    Toasted and ground cumin seeds – 1 teaspoon
•    Grated ginger – 1 teaspoon
•    Chopped lemon grass – 3 teaspoon
•    Toasted and ground coriander seeds – 1 teaspoon
•    Cayenne – ¼ teaspoon
•    Turmeric – 1 ½ teaspoon
•    Fish sauce – 1 teaspoon
•    Soy sauce – 2 teaspoon
•    Coconut milk – ½ cup
•    Lime juice – 1 teaspoon
•    Cilantro and basil leaves – for garnishing purpose

Ingredients Needed For The Cucumber

•    Salt – ½ teaspoon
•    Peeled, halved and cut into ¼ inch cubes, Persian or Japanese cucumbers – 1 pound
•    Lime juice – 2 teaspoon
•    Granulated sugar – 2 teaspoon
•    Thinly sliced shallots – 2 small of about ½ cup
•    Fresh serrano or thai chilles, sliced into circular shape – 2

Ingredients Needed For Making The Peanut Sauce

•    Fish sauce –  2 teaspoon
•    Unsalted and dry roasted peanuts – 1 cup
•    Chopped garlic clove – 2
•    Soy sauce – 1 teaspoon
•    Sesame oil – 2 teaspoon
•    Cayenne – ¼ teaspoon
•    Brown sugar – 2 teaspoon
•    Lime juice -2 teaspoon or more for taste
•    Coconut milk – ½ cup

Let’s Go Through The Procedure To Prepare This Recipe

Step 1

Proceed with preparing the skewers. You have to start the recipe by putting the pork into a mixing bowl. Take a separate bowl and add shallots, ginger, lemongrass, coriander, cayenne, cumin, turmeric, lime juice, brown sugar, coconut milk, garlic, fish sauce and garlic. Mix all these ingredient few times first and then you can pour the mixture over the meat. Stir few times with your hand or a spoon. After this, you can put all the mixture on top of the meat and coat the meat with it. Use either your hand or a spoon for this purpose. Place aside for some time or you can marinate for about 30 minutes minimum and a maximum of overnight. In the meantime, you must keep 13 bamboo skewers into the water. Do not remove to check in between.

Step 2

In this step, you have to prepare cucumber. Take a mixing bowl in this step as well. Add cucumbers to it followed by salt. Next, you can add sugar, lime juice, chilles and some shallots. Toss to mix it well or you can use your hands for the same. Make sure that it gets coat well. Let’s keep this aside for some time. in the meantime, you can do with the rest of the recipe. For that you need to check the seasoning and transfer the whole to another serving dish.

Step 3

In this step, you have to prepare the peanut sauce. For this, you will be needing a food processor. Into the food processor, add the peanuts and pulse until these are finely ground. Next, add sesame oil, soy sauce, garlic, brown sugar, coconut milk, cayenne & lime juice. Process all of these ingredients until these are finely processed or ground. Next, transfer this to another bowl. Taste and season as per your taste. You can adjust the seasoning in every portion of the recipe by this. If you are doing it right, then this might have become little thick. To thin it out, you need to add some lime juice or water accordingly.

Step 4

It is time to use the bamboo skewer now. After each bamboo skewer, thread one slice of pork. Making sure that you keep the meat as lean and as flat as possible. Now comes the barbecue portion. Very carefully, grill it on top of the hot coats. Use either a stovetop grill or a broiler for this. Grill for 3 minutes from each side. Do this, until it is cooked thoroughly and turned lightly brown from each side. When done, you have to transfer it to another platter and garnish form above with basil leaves or cilantro. This is all you need to do to prepare this recipe. To enlighten the taste more, you can serve it with peanut sauce and some cucumber. If you prefer some sweetness into the recipe then do add some sweet banana sauce to the recipe. Serve while hot.

Step 5

In this step, you need to keep in mind that the more you marinade, the better it will taste. And use boneless as much as possible and thin slices of the breast. Also, soak the bamboo skewers well into the water before you finally start threading it into the meat.
