Cooking Time: 15 Minutes
Veg/Egg Hakka noodles (depends on your choice) – 200 mg
Tiger prawns – 200 mg
Sesame oil- 3 tbsp
Ginger – I medium sized knob finely chopped
Spring onions- 2
Spring onion greens – handful, finely chopped
Beans- 3-4 sticks chopped
Dry red chilies -2
Fennel seeds- 1 tsp

Cucumber – 1 diced
Coriander – few sprigs, finely chopped.
Lemon juice – 1 lemon
Sweet chilly sauce- 3 tbsp
Soy sauce- 1 tbsp
Black Pepper powder- 1 tsp
Salt- According to taste
Boil the noodles by adding a pinch of salt in the water. Once they’re properly boiled, strain them and immediately run cold water through them. Pour in half a table spoon of oil and mix. This will make sure that while you’re busy with the prawns, the noodles don’t stick together.
Heat a frying pan, add sesame oil. Once the oil is hot, add the prawns. Add salt and black pepper powder and keep tossing till you see their tails curling up. Once that happens, remove the prawns from the pan and heat again.
Add oil to the pan. Once it is hot, add the ginger, spring onions, dry red chilies, fennel seeds, beans and celery. Quickly saute them on medium heat and then add spring onion greens. Sprinkle salt and black pepper powder. Constant tossing would be best.
Add your semi cooked prawns to this, and turn down the heat. Add sweet chilly sauce and soy sauce. Mix well. Let it cook for a while.
Just when you think it is all almost done, squeeze in a lemon in it, and add the cucumber. (Bottled lemon juice also works, but fresh is always better) Don’t cook for too long after this. Turn off the heat, within a minute and garnish with chopped coriander.
By this time your noodles should have cooled down. Add salt, black pepper powder, soy sauce, spring onions and coriander to them and mix well.
Prawns are essentially the hero of this preparation and the noodles are a side dish. For plating you could put little stir fried prawns and little noodles beside each other. Or you could place the noodles first and create a well in the center and put the stir fried prawns in it. Your loved ones are sure to be impressed with your culinary skills!
If you do not have sesame oil, any vegetable oil will do. Similarly, lemon juice also can be replaced with vinegar. Also you can add any vegetables of your choice like carrots, bell peppers, garlic etc. Even button mushrooms would go well. Remember, it’s not a hard and fast dish, it’s an easy going flexible dish and you can add your own personal touches to it.
