Pineapple Fried Rice is a basically a quick and easy recipe that you can prepare any time in your kitchen. This lip smacking recipe contains simple ingredients of your kitchen. Pine apple is the key ingredients for this recipe which is rich in dietary fiber and other vitamins also minerals. Pine apple is very good for health as it is also so tasty. Pineapple Fried Rice:
Preparation Time: 30 Minutes
Cooking Time: 20 Minutes
Fresh Pineapple 1 ½ cup (chopped)
Cooked Steamed Rice 3-4 cup
Vegetable or Chicken Stock ¼ cup
Shallot 2 (chopped)
Garlic 2 cloves (chopped)
Green Chili or Dried Red Chili 1 (chopped)
Frozen Peas ½ cup
Carrot 1 (small one
cut it into slices)
Raisin ¼ cup
Roasted Cashews ½ cup (do not use salted cashews for this recipe)
Spring Onion 3 (chopped)
Coriander Leaves ½ cup (chopped).
For Star Fry Sauce:
Soy Sauce or Fish Sauce 3 tbsp
Curry Powder 2 tbsp
Curry Powder 2 tbsp
Sugar ½ tbsp
Refined Oil ½ cup
Pour streamed rice in a bowl and add a little amount of refined oil in this bowl. Mix it well and it will make the rice distinct from each with the other. Take a cup and pour soy sauce, curry powder and sugar in it. Mix it well to prepare Star Fry sauce.
Then take a non stick pan and pour refined oil in it. Allow it to boil in medium heat. Beat the content of egg in a bowl and pour it in the pan.
Then add shallot, chopped garlic, chopped green chili, frozen peas and chopped spring onion one after another in this pan. Stir the whole thing continuously.
When the oil get completely absorbed by all these aforesaid ingredients pour chicken or vegetable stock in the pan. Then pour previously prepared star fry sauce in the pan and stir the whole thing well.
Then pour steamed rice in the pan and mix the rice with all other ingredients. Before you turn off the flame, add all chopped pieces of pineapple in this rice.
Mix it well, cook it for 1 minute and then turn off the flame. Serve your Pineapple Fried Rice hot to your family members.
If you do not have fresh pineapples you can use canned pineapple in this recipe. But for that make slices of them.
