Preparation Time: 15 Minutes
Cooking Time: 20 Minutes
Tri Colored Sandwich:
Carrots 100 gm
Spinach 200 gm
Beetroot 50 gm
Bread slices 12
Oregano ½ tsp
Rosemary ½ tsp
Parsley ½ tsp
Olive oil 2-3 tsp
Butter 50 gm
Black Pepper Powder 1-2 tsp
Salt to taste
Tomato Pulp 1/3 cup
chopped garlic 1-2 tbsp
lemon juice 1-2 tsp
First peel the skin of the carrots and then make small pieces out of it. Clean with water and boil them in water. Add a pinch of salt in water while boiling it. When it is done i.e. it turns soft turn off the flame.
Then mash the carrots and make a smooth pulp out of it. Take a nonstick pan and pour olive oil in the pan. Allow it to boil in medium heat. Add chopped parsley and chopped garlic in it. Sauté it for a while. Then pour the carrot pulp in it. Add salt and black pepper powder as per taste.
Cook it for 2-3 minutes and then remove it from flame. Pour it in a bowl and keep it aside. Now separate the stem from the spinach leaves and clean it properly with water. Then boil it in salt water. When it is done separate the boiled spinach leaves from water. Grind the boiled spinach leaves to make a paste.
Again pour oil in a non stick pan and allow it to boil in medium heat. Then pour chopped garlic and chopped oregano in it. Cook it for 1-2 minutes. Then add spinach pulp in this pan. Add salt and pepper powder to taste. Add lemon juice in it. Cook it for 2-3 minutes and then remove it from the flame. Pour it in a bowl and keep it separate.
Now peel the beet root and make slices of it. Boil it in salt water and in the same process grind the boiled beet roots. Now take another pan ad boil olive oil in it. Add chopped garlic and rosemary in it. When the smell comes out add tomato pulp in it. Cook it for 1-2 minutes. Then add beet root paste in it. Add salt and sugar to taste. Cook it for 3-4 minutes and then turn off the flame. Pour it in a bowl.
Now grill the breads in a toaster and apply butter in one side of the bread. Now pour the carrot mixture on one side of a bread slice. Then cover it with another bread slice. Then pour spinach mixture on this bread slice. Again cover it with another bread slice. Pour beet root mixture on this bread. Finally cover it with another bread slice.
In this method place one bread slice on the other and make a tower like thing. First the yellow mixture of carrots, green mixture of spinach and then red mixture of beet root. Then cut the sides of the breads with a sharp knife and discard them. Make other tri color sandwiches in same method and then serve it.
