Here is the superb recipe to prepare the Mutton cutlet easily in your kitchen. It is an amazing snack that you can try this weekend. This recipe is made with simple ingredients of your kitchen and the cooking procedure does not have any complex steps. Just follow each and every steps of this recipe and prepare Mutton cutlet with an ease. Though the recipe is a long one but it comprises simple steps.
Here Is Quick Recipe To Prepare Mutton Cutlet:
Preparation Time: 1 Hour
Cooking Time: 30 Minutes
Mutton 500 gm (cut it in to small pieces
bones will be definitely separated)
Boiled Potato 4
Chopped Ginger 1 tea spoon
Chopped Garlic 2 tea spoon
Dried red Chili powder 1 tea spoon
chopped green chili 3-4
Green Cardamom 2
Cinnamon stick 1
Chopped Coriander and Mint leaves 2 table spoon
Chopped Tomato 1
Bread Crumb 1 cup
All Purpose Flour 1 tea spoon
Tomato sauce 1 table spoon
Refined Oil for dip fry
Salt and Sugar to taste.
First take the mutton pieces, wash it with plenty of water. Strain the excess water from the meat. Now marinate it with a little salt and lemon juice and a pinch of salt for one hour. Then grind it in your grinder in fine paste. Do not add the liquid that is generated from the marination while you grinding the meat. Peel the onions and then chop them finely with a sharp knife.
Then take a non stick pan and turn on your gas. Pour 2 green cardamom, 2 cloves and 1 cinnamon stick in it. Dry roast the spices until you smell the exotic flavor of the spices. When it is done set it aside to cool and then grind it in fine powder. Store this powder in an air tight container. This powder will be used in later steps of the recipe.
Take another non stick pan and pour 2-3 tea spoon oil in the pan. Put the gas on the simmer and then pour chopped onion in it. Fry it for some time. When it get half fried, looks transparent and the smell comes out add chopped tomatoes in it. Stir it and mix. When it turns soft add chopped ginger, green chili and mutton paste in it. Add salt to taste. Add a little sugar and then mix it again. You will notice that the oil is now getting separated from the mix.
Add a little water in it; but be careful when you are adding water. Do not add so much of water in it and mix the other ingredients. Cover up the pan with a lid and cook it for 8-10 minutes. When the mutton turns soft and the water in the mixture get dry add chopped coriander and mint leaves. Stir again and check the mutton with a fork that whether it is properly done or not.
Then mash the boiled potato and add the mashed potato in the pan. Add the roasted spice powder in it and stir the whole thing to mix well. Cook the whole thing for 4-5 minutes and then remove it from the flame.
Spread the mixture on a plate and allow it to cool. Take a bowl and break the eggs in it. Bit the eggs. Then add all purpose flour and salt to taste in it. Then bit it again to prepare the batter. Be careful that there should not any lumps in the batter.
Now take the small portions from the mixture that you have prepared before and give them shape of cutlets. Now dip it in to the egg batter. Spread the bread crumbs in a plate; roll the cutlets in brad crumb. Then again dip it in the batter and again roll it in the bread crumb.
Repeat the same process with all the cutlets. When all the cutlets get prepared, keep them in the refrigerator so that they become little stiff. Take them out from the fridge at least 5-10 minutes before you fry them.
Pour oil in a non stick pan and boil it in medium flame. Deep fry the cutlets till they turn golden brown. Serve Mutton cutlet hot with tomato and onion salad.
When you are preparing the mixture of the cutlet you can use a little corn flour or gram flour in it. It will work as a binder and keeps the mixture tight so that you can make the cutlets easily from the mixture.
