In a glass bowl, mix together all the ingredients for the marinade , except corn starch and sugar.. Put chicken pieces in a zip lock pouch, pour enough marinade to coat the chicken pieces nicely and leave it for marinating in the refrigerator for half an hour. Keep the remaining marinade aside.
In the meantime, mix corn starch and all purpose flour with some water to a coating consistency and add sufficient salt. Beat the egg whites with a pinch of salt and keep aside.
Take the marinated chicken pieces, dip them one by one in beaten egg whites and roll it over the flour mixture, for a nice coating. Heat oil in a deep skillet to a temperature of about 350 degree Fahrenheit and fry the chicken pieces carefully, in batches, to a nice golden color.
Place them in a plate, lined with tissue paper for removing excess oil.
In a pan, add the remaining marinade. Mix corn flour in one glass of water and add to it. Heat it in low flame, stirring continuously, until it reaches a nice sauce consistency.
Toss the fried chicken pieces in the sauce and serve immediately. Garnish with roasted sesame seeds and chopped scallions.
