Cooking Time: 45 Minutes
Servings: 16 Pieces
Desiccated coconut: 100 grams
Caster sugar: 500 grams
Cocoa powder: 100 grams
Butter: 250 grams
Eggs: 4 pieces
Self raising flour: 100 grams
Icing sugar: for garnish
Method Of Preparation:
Pre-heat oven to 180 degree Celsius. Line a baking dish with parchment paper and grease it thoroughly with butter. Keep aside.
Heat a saucepan and add the butter, cocoa powder and sugar. Stir continuously and let it melt on a slow flame. Do not leave the pan or it might burn. When it forms a uniform mixture, let it cool.
Add the eggs one by one to the cooled chocolate mixture. Make sure the sauce is cool or the egg will curdle. Add a teaspoon of flour every time you add an egg and whisk well. Slowly mix in the remaining flour, adding little at a time. Mix well until it is combined well.
Add the desiccated coconut to the flour mix and fold well. Combine all the ingredients uniformly to create a smooth brownie mixture.
Pour the brownie mix into the baking dish and let it bake for 45 minutes. Put it in the middle rack and let it bake. After 30 minutes, check the brownie, if the top is turning brown or it seems to burn, add another parchment paper on top. Let it bake for another 10 minutes if you want it to be fudgy. But, if you want it to be slightly firmer, let it complete the entire baking time of 45 minutes.
Let the coconut brownie cool completely before cutting it into squares. Dust the brownie pieces with icing sugar and serve.
