Chicken legs: 4 pieces
Olive oil: 1 tablespoon
Pitted Black Kalamata Olive: 100 grams
Mushroom: 300 grams
Garlic and herb passata: 500 grams
Chicken stock cube: 1 piece
Parsley: a handful
Salt: to taste
Black pepper: 1 teaspoon
Pasta: for serving
Fresh salad: for serving
Mashed potato (optional): for serving
Green vegetables stir fry (optional): for serving
Method Of Preparation
Choose skinless chicken pieces for this recipe. Clean the mushrooms and cut them into halves.
Heat olive oil in a casserole. Add the mushrooms to hot oil and stir fry for a few minutes, until it softens slightly. Now rub some salt over the chicken pieces and add it to the pan. Cook the chicken legs on both sides until it is light golden in color.
Once the chicken is golden, add garlic and herb passata. This will add taste and flavor to your gravy. Mix in olives and add the crushed chicken stock cube. Give it a good stir and add black pepper powder. Check seasoning and adjust the salt according to your taste. The passata and chicken stock cube is quite salty, so make sure that you do not add a lot of salt.
Cover the pan and let it cook for 35 to 40 minutes on a medium flame. Check to see whether the chicken legs are soft or not. When it is fully cooked scatter some chopped parsley leaves on top and serve it either with a pasta of your choice and fresh salad or prepare some mashed potato or stir fried green vegetables.
To prepare the pasta, heat water in a large pan. Add the pasta when it starts simmering. Stir in some salt and a teaspoon of oil. Pour a packet of pasta and cook according to pack instructions. It will take somewhere around 7 to 8 minutes to cook it. Drain the excess water and run some cold water over it. Spread the pasta on a serving dish and place the gorgeous French Chicken Marengo on top of it. Serve it to your friends and family and enjoy a delicious meal. For the salad, take some cucumber, cherry tomatoes and onions in a bowl. Cut them into small pieces. Drizzle a teaspoon of lemon juice over it and season with salt and black pepper.
