Another grilled recipe in your menu, you are going to love it. The smoky and grilled lamb kebabs and the peaches will only enhance your taste buds and you will feel like cooking it over and over. In this recipe, you have the choice of many servings that you can adjust according to you. Here, you are using yoghurt and mint, but you can also use other ingredients of your choice. Just don’t mix with the kebabs and the smoky peaches if you are not sure.

Yoghurt – 1 cup
Curry powder – 1 teaspoon
Minced fresh mint – ½ cup
Boneless lamb leg – 2 pounds
Extra virgin olive oil – 1 /4 cup
Salt and freshly cracked pepper – as per the taste
Pitted and halved peaches – 2 (should not be peeled)
Balsamic vinegar – ¼ cup
Roughly chopped garlic – 1 teaspoon
Roughly chopped basil leaves – ¼ cup
Tabasco – 4 to 8 shots or depending upon your choice
Direction To Prepare This Recipe:
You have to build a fire first. Build in the grill. When the temperature is medium hot and the coals are all covered with grey ash, you will know that it is time to cook. You will also understand this by being able to place your hand at 5 inches above the grill for 3 to 4 seconds. If you are capable of doing so, this means that you fire is ready. If you are using a gas grill, then you have to set the burner at high and heat it for 15 minutes. After this, turn it to medium to high temperature.
In this step, you will be needing a small bowl. Into the bowl, add mint and yoghurt together. Mix well and then place aside.
Trim most part of the lamb especially the fat but make sure that you do not remove all the fat from the lamb. After this, cut the lamb into 32 pieces or small chunks. Each piece should be of one-inch square. Add the pieces into a large bowl. Add olive oil, salt and pepper, curry powder to the bowl on top of the lamb pieces and toss few times so as to mix well. After this, thread all the pieces into skewers.
Place the skewers directly over the coals on the grill. Do place the peaches as well. Cut its side down and the meat steaks and the peaches both for about 6 minutes and until these become soft and slightly charred. Make sure that you do not grill too much. This all will take only about 6 to 8 minutes. Remove it from the grill next and cut into large wedges.
While you are roasting the peaches and the steaks, you can cook the lamb. Turn it over the coal so as to expose all the four sides to the direct heat. Grill till you want it. This will take about 2 to 3 minutes every side or 8 to 12 minutes in total. To check, remove one piece from the heat and cut it so as to see whether cooked or not. If not cooked to your likeness, then give it some more time.
Next, you will need a large bowl or a platter. Into it, put the peaches and the lamb together. Add vinegar, garlic, tabasco and basil on top. Toss few times so as to coat well. Add some seasoning like salt and pepper as per your wish. You can also add mint and yoghurt as per your choice. This completes your recipe.
