Recipe For Healthy Beetroot Brownies

Beetroot is a superfood that is extremely nutritious, full of vitamins, antioxidants and power packed with vitamins. While you may not try this vegetable otherwise or finding it difficult to feed it to a picky little one, it is best to try this heathy recipe which incorporates the goodness of beetroots into extremely tasty brownies.

Recipe For Healthy Beetroot Brownies

Preparation Time: 20 minutes
Cooking Time: 35 to 40 minutes
Servings: makes 20 squares


Beetroot: 500 grams
Dark chocolate (with 60% to 70% cocoa content): 200 grams
Caster sugar: 250 grams
Butter: 100 grams
Plain flour: 100 grams
Eggs: 3 pieces
Cocoa powder: 1 and ½ tablespoon
Vanilla extract: 1 teaspoon
Chopped nuts: 3 to 4 tablespoon

Ingredients For Chocolate Ganache:

Chocolate: 100 grams
Double Cream: 100 grams

Method Of Preparation:

Step 1

Clean and cut the beetroot into small pieces and boil it with water until it is soft and tender.

Step 2

Pre-heat the oven to 180 degree Celsius and line a baking tray with parchment paper. Grease the tray and the paper with generous amounts of butter.

Step 3

Once the beetroot is cooked put it in a sieve and remove all the excess water from it. Let it dry for some time and as it cools down, chop the chocolate into small pieces. Also, cut the butter into small cubes. Take a food processor and blend the beetroot, chocolate and butter along with some vanilla extract. Wait till it forms a smooth mixture. The butter and chocolate must melt in the process and completely mix with the beetroot pulp.

Step 4

Take a large bowl and break all the eggs. Add the caster sugar to this and beat the mixture with an electric whisk until it turns creamy. This will take some time and you need to whisk for about 2 minutes. Once done, slowly mix the beetroot and chocolate mix into the bowl. Use a spatula to gradually fold it into the egg and sugar mixture. Try to maintain the aeration created by whisking and do not fold or mix vehemently.

Step 5

Sift the flour along with cocoa powder in another bowl. Mix both the dry ingredients well. Slowly add this to the prepared wet mix. Fold gently and avoid pouring all the flour at the same time. Add small batches of flour to facilitate even mixing. Prepare a lump free, smooth batter for the brownie.

Step 6

Spoon the mixture into the baking dish and spread it out evenly. Let it bake for 25 minutes at 180 degree Celsius. Check the center of the brownie with a skewer. If it comes out clean or is slightly moist, the brownie is perfectly done. Let it cool for some time. Cut it into squares before serving.

Step 7

Decorate the healthy beetroot brownies with some chocolate ganache made with equal quantities of chocolate and double cream. All you need to do is heat both the ingredients on a low flame or in the microwave for 30 to 40 seconds until it forms a glossy, smooth chocolate sauce. Spread it over the brownies to make them even more beautiful and attractive. Sprinkle some chopped nuts such as almonds, walnuts or pistachios on top to give it an elegant look.
