Recipe For Mexican Chicken Tacos

A complete meal in itself, it is a very healthy option when you are on the go or trying to feed your fidgety little one a delicious dish. Recipe For Mexican Chicken Tacos

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Servings: 4

Ingredients:

Readymade corn tortillas: 4
Chicken: 500 grams
Pepper powder: 1 teaspoon
Chilli or cayenne pepper powder: ½ teaspoon
Olive Oil: 2 tablespoon
Garlic: 2 to 3 cloves
Chopped Onion: 1/4th cup
Tomato: 1 small
Cheese: As per your taste
Salt: For seasoning
Chopped Cilantro: A handful
Cucumber cubes: 1/4th cup
Onion roundels: 3 to 4
Lime juice: 4 to 5 tablespoon
Hot sauce: 2 to 3 teaspoon

Method Of Preparation:

Step 1

Let the chicken boil in a pot of water. Add some salt and pepper to it along with 1 to 2 cloves of garlic and half an onion. Cook the chicken until it is tender and soft.

Step 2

In another pan, heat some olive oil and toss freshly chopped garlic. Let it saute for some time and wait till it becomes slightly brownish in colour. Add the chopped onion to it and let it turn translucent. Remember to keep it on a medium flame to prevent burning.

Step 3

Once the onion is cooked, it is time to add the spices. Add salt, pepper, chilli or cayenne pepper powder and add a little bit of water to prevent the spices from burning. Mix well and let the spices cook with the oil. As the oil starts to float on top, add the chopped tomatoes. Let it cook thoroughly until it is mushy. Continuously stir with a ladle to create a nice consistency.

Step 4

Meanwhile, check whether your chicken is cooked or not. If it is already cooked, remove from heat and shred the pieces. Add the shredded chicken to the tomato gravy that you have just prepared. Let the chicken cook with the gravy for some time. You can add some water at this point in time or use the chicken broth to cook it. Cover and let it simmer for 5 minutes. In some time, the excess liquid will be completely absorbed and your filling will be ready. Add some grated cheese to the chicken mix. Take a handful of cilantro and sprinkle it over the chicken and mix well before switching off the stove.

Step 5

Now it’s time to work on the tortillas. Heat a pan and spread the tortilla on it. Let it heat for about 2 to 3 minutes on each side, making sure that it is not burnt. Check frequently to see whether it is being toasted perfectly or not.

Step 6

Fold the tortillas into halves and stuff it with the filling. Add some chopped cucumber, onion rings and your choice of hot sauce on top. Grate some cheese on it and sprinkle a little bit of chopped cilantro on top. Garnish with fresh lime wedges and your tortilla is ready to be devoured.

Step 7

Serve it with a dip of mayonnaise and tomato ketchup or make a salsa with cucumber, onion and tomato cubes to be served along with the chicken tacos.
