Thai cuisine is famous for its exotic flavors and ingredients and is one of the most sought after international cuisines. Tom Yum Chicken Drumstick infuses all the traditional and authentic flavors of Thai cooking. In this dish, chicken drumsticks are baked after coating with an aromatic marinade sauce consisting of an array of ingredients including lemon grass, galangal and kaffir lime leaves.

Cooking Time: 1 Hour
Chicken drumsticks, with skin – one Kg
Black soy sauce – one teaspoon
Freshly squeezed lemon juice – one tablespoon
Vegetable oil – four tablespoons
Red onions, minced – half cup
Lemon grass, white portion, minced – five tablespoons
Tamarind pulp – one teaspoon
Garlic, minced – three tablespoons
Fresh galangal – one inch piece
Fresh ginger – half inch piece
Fish sauce – one tablespoon
Shrimp paste – one tablespoon
Dry red chilies – five
Warm water – half cup
Coconut milk – five tablespoons
Fresh cilantro, chopped – two tablespoons
Kaffir lime leaves – two
Brown sugar – four tablespoons
Remove seed from the dry red chilies and soak them in half a cup of warm water. Keep aside.
In a glass bowl, mix together black soy sauce, fish sauce, shrimp paste, tamarind pulp and lemon juice. Marinate the chicken drumsticks with this paste. Add salt for seasoning and keep refrigerated for half an hour. The taste improves if refrigerated overnight.
Preheat the oven to 350 degrees Fahrenheit.
In a blender, grind chopped red onions, lemon grass, garlic, galangal, ginger, cilantro, kaffir lime leaves,, vegetable oil, coconut milk and brown sugar to a fine paste. Add the soaked red chilies along with the water used for soaking and blend further for half a minute. Keep aside.
Transfer the marinated chicken drumsticks to a large bowl and pour the blended mixture over the pieces. Add the chopped cilantro, check for seasoning and mix well with a ladle so that the chicken pieces are coated all over with the sauce.
Arrange the chicken drumsticks on a flat oven proof tray in a single layer and pour the remaining sauce over the pieces. Bake uncovered for half an hour. Take out the baking tray, flip the chicken drumsticks and spoon sauce from the tray over the chicken. Bake for half an hour more and serve hot.
