New potato – 500 gram bag
Thinly sliced red onion – ½
Corn cobs – 2 large
Olive oil – 2 teaspoon
Crushed garlic clove – 2
Skinless chicken breast – 4 (each one should be cut into half from the middle so as to form 2 thin escalopes)
Sweet smoked paprika – ½ – 1 teaspoon
For serving – Lime wedges (although optional)
Roughly chopped coriander leaves – small bunch
Direction To Prepare The Recipe For Smoky Chicken With Corn And Potato Serving:
Take a saucepan large enough to hold all the corn and potatoes together. In this saucepan, pour water and allow to boil. Add potatoes in the water for some 12 minutes. Next, add corn 6 minutes after adding the potatoes. Boil until you find both of these turned tender. Finely remove from the heat and drain the water. Keep the ingredients aside.
Take a large bowl and add lime juice and sliced onion to it. Add half portion of the total amount of oil mentioned above and mix properly.
Take another shallow bowl and add the remaining oil in it. Next, add paprika, garlic and some seasoning. Put the chicken pieces until all are coated thoroughly.
Place a griddle pan on high heat and add chicken to it. Griddle the chicken until cooked thoroughly or for 3 minutes. Remove from the pan after and place aside.
Shift the potatoes into the bowl containing onion. Take corn and slice all down the length, cut the kernels into strips.
Mix the cut corns into the potato bowl and add some coriander and season it well.
This completes your smoky griddled chicken with vegetable serving. Place the smoky chicken pieces in a platter with the potato salad aside along with lime wedges.
