Thai Fried Rice With Prawns And Peas

Red onion: 1 piece
Red chilli: 1 piece
Garlic: 2 cloves
Brown rice: 1 cup
Frozen pea: ½ cup
Eggs: 4 pieces
Prawns: 250 grams
Fish sauce: 1 tablespoon
Dark soy sauce: 1 tablespoon
Vegetable oil: 2 tablespoon
Coriander: 1 bunch
Chilli sauce: to serve
Cucumber: 1 piece
Cherry tomatoes: 5 to 6 pieces
Onion: 1 small
Iceberg Lettuce: few leaves
Lemon juice: 1 tablespoon
Salt: to taste
Black pepper: 1 teaspoon

Method Of Preparation:

Step 1

Slice a red onion into halves and finely chop the red chilli. Take a fresh bunch of coriander. Wash it and chop finely. Thaw frozen peas in cold water.

Step 2

To cook the brown rice, wash and soak it in cold water for 15 to 20 minutes. In a large pan take enough water to cook the rice. Let the water boil. Add the rice with half a spoon of salt and let it boil. Check frequently to ensure that the rice is cooked thoroughly. Drain the excess water when the rice is fully done. Prevent it from becoming soggy. Keep aside and let it cool down.

Step 3

Take a pan and fry four eggs separately with some salt and black pepper. Keep it ready to be served with the rice.

Step 4

In a large wok add some vegetable oil. When the oil heats up, add chopped garlic cloves, chilli and sliced red onions. Stir well until the garlic becomes golden brown in colour. It will take 2 to 3 minutes. Once done, add the fresh prawns. Toss it for a minute or two until it loses the raw flavor. Mix in the peas and let it cook for a minute.

Step 5

Now it is time to add the brown rice. Make sure that the rice is slightly hard. Avoid using mushy rice for this recipe. Mix in soy sauce and fish sauce with the rice. Stir well until all the ingredients mix together. Sprinkle freshly chopped coriander and stir through the rice.

Step 6

Take four serving bowls and divide the Thai Fried Rice with Prawns and Peas. Place the fried eggs on top of each bowl. Sprinkle some coriander leaves on top. If you like to make it slightly spicy, add a spoonful of hot chilli sauce on top. This mouthwatering delicacy is now ready to be served hot.
