Aromatic Prawn And Cashew Curry

Ingredients Needed To Cook The Recipe:

Chopped onion – 1
Peeled garlic clove – 4
Peeled and roughly chopped ginger – small thumb size piece
Seeds removed green chilli – 2
Sunflower oil – 1 teaspoon
Leaves picked and roughly chopped stalked coriander – small bunch
Butter or ghee – 1 teaspoon
Garam masala – 2 teaspoon
Chopped tomato – 400 ml
Unsalted cashew – 150 gram bag
Raw King prawn – 400 gram
Chicken stock -400 ml
Natural yoghurt – 150 ml pot
Rice and indian bread – for serving
Double cream – 50 ml

Direction To Prepare The Recipe:

Step 1

Into a food processor, add ginger, garlic, chilles and coriander and onion. Pestle or mortar and mix all these ingredients to make a fine paste. In the meantime, you may take a large frying pan and place on high setting. Add some butter or ghee and oil to the pan. Add the paste into the pan and stir fry for about 5 minutes or till it becomes soft. Now add the garam masala to the mixture and cook for another 2 minutes. Stop, when it starts leaving a fine aroma and place aside.

Step 2

Take another pan and add some cashew nuts so as to toast them. Toast until they become golden in color. Add half portion of the nuts to the food processor and blend until grounded finely. Place the leftover cashews aside.

Step 3

Next, add the chicken stock, tomatoes and the blended cashews to the pan and season this mixture. Allow to boil on low heat and then simmer. Cover with the lid and keep for 45 minutes. Now comes the main part of the recipe that is of adding the prawns to the pan. Add carefully and cook for further 2 to 3 minutes or until the prawns turn pink in color. When it does, add double cream and yoghurt and stir to mix properly. Spread the remaining cashew nuts and the coriander leaves.

Step 4

This completes the recipe. The only thing left now is to serve. Serve best with rice or naan bread.
